750g of sliced chicken
1chopped orange capsicum, (without seeds)
1 onion, cut into thick slices
50g of chopped snow peas,
Extracted Lemon Juice from 1 Lemon
270ml of coconut milk
20ml of fish sauce
For Veggie Gravy
2teaspoons vegetable oil
½ teaspoon of slightly grind black pepper
½ teaspoon of slightly grind coriander seeds,
1teaspoon of slightly grind cumin seeds,
2stalks of chopped lemongrass,
6coriander roots, grated
2garlic cloves, grated
2cm piece grated ginger,
2 long red chillies, cutted diagonally
2 anchovy fillets
To begin with, Put all the ingredients of veggie gravy, vegetable oil, cumin, pepper, coriander, ginger, garlic, chili, anchovies, coriander root, and lemongrass in a food processor and blend them to form a fine paste. Now, take a frying pan and keep it on medium heat and add the paste into it.
Stir and allow it to cook for 3 to 5 minutes till the mouth watering aroma comes out. After that, add the chicken pieces into it and stir well to make layer of the gravy on the chicken. Cook the chicken at least for 5 minutes till it appear golden brown. Now it’s the turn for coconut milk to boil the chicken, add along with capsicum and fish sauce and cook it for at least 5 minutes.
Next add the remaining capsicum and chopped onions and again leave it for 3 minutes, to be bubble and turn the chicken to be well cooked soft and crispy. Finally add the lemon juice, fish sauce, snow peas and some palm sugars to increase the taste.
As your Green Chicken Curry is ready, transfer it into a serving bowl and sprinkle some coriander leaves and serve hot!
