Cauliflower is a low calorie vegetable. Moreover, it contains vitamin C, vitamin K, folate and fiber. For this reason, if you are an overweight person and have an intention of lowering the weight, cauliflower is an ideal vegetable for you provided you cook it in a proper way. To make low calorie cauliflower preparations restrict the use of oil, clarified butter and other fatty products.
Here are three cauliflower recipes which are yummy to taste but very low in calorie
Cauliflower With Curry Leaves
1 cauliflower, fresh curry leaves, coconut oil, red chili, mustard seeds, salt.
Cut cauliflower into medium pieces. Wash them with warm water.
Boil water in a pot and add salt in it. Boil cauliflower pieces in this salty water for 5-6 minutes to ensure that they are slightly soft. Strain the water. Now in a pan add 1 tablespoon coconut oil. Add mustard seeds, red green chili and curry leaves in it. Let them pop. Then add boiled cauliflower on it. Stir well. Add additional salt if it is needed. Stir well to combine everything. Before withdrawing it from oven sprinkle a few drops of coconut oil on cauliflower. Stir to mix the oil. Coconut oil will add shine and a sweet flavor to the food. Serve it with bread at breakfast.
Cauliflower In Green Curry
1 cauliflower, 1 bunch fresh coriander leaf, 1 bunch fresh mint leaf, 5-6 cloves of garlic,1 cup yogurt (sour), pepper corn, 5 green chili, olive oil and clarified butter.
Cut cauliflower in to large pieces. In a grinder add coriander leaves, mint and garlic cloves and grind them to green paste. Beat the yogurt. Grind peppercorn to fine powder. Slit green chili and remove the seeds.
Boil cauliflower in water for 5-6 minutes. Then strain the water. On a pan heat 2 teaspoons olive oil and add cauliflower in it. Add salt and stir well. Then add the green paste and yogurt and stir continuously to mix all the spices. If you do not like the complete sour taste you may add a pinch of sugar to make the preparation slightly sweeter. Cook it for sometime till the cauliflower turn soft. Remove it from heat. Sprinkle freshly ground pepper, add a teaspoon clarified butter and green chilies in the vegetable. Then stir well to mix everything and put them in a container for keeping the lid on to preserve the smell. Serve them with handmade bread for lunch or dinner.
Cauliflower Yellow Curry
1 cauliflower, 1 large potato, 1 onion, little ginger, 2 cloves of garlic, 1 tomato, turmeric powder, bay leaves, cinnamon, clove, cardamom, salt, sugar and mustard oil.
Cut cauliflower into medium pieces. Cut potato also in medium pieces. Grind onion, ginger and garlic to paste. Cut tomato into small pieces.
Boil cauliflower and potato in salty water so that salt penetrates to the vegetables and the vegetables become tender. Heat 2 tablespoons mustard oil in a pan. Add bay leaves and the whole spices. Let them pop. Then add tomato and fry them on a low flame to melt it and to extract the red color of the tomato. Add a pinch of sugar in the oil and fry to obtain a red color. Then add the spice paste. Fry them properly and add some water in the spice. Add salt to taste. Add cauliflower and potato in it for sometimes. When the gravy is thick enough, remove it from oven and serve them with hot rice at lunch or dinner.
