This is a brilliant and refreshing drink, as it contains mint leaves for a chilly and breezy effect. This can be simply made with cognac, simple syrup, mint and ice. Shamble some mint leaves at the bottom of a highball glass. Take a cocktail shaker and mix well 15 ml of simple syrup and 30 ml of cognac together. Fill the highball glass with crushed ice and pour the mixture into it. Top the glass with some more crushed ice, forming a small heap, and pour 30 ml of cognac stirring onto it. Garnish with mint leaves.

Shake well 45-50 ml of vodka and 80 ml of champagne in a martini shaker. Pour the mixture into the chilled martini glass. Garnishing is best done with fresh raspberries.
