Here Are Tempting Sweet Corn Bacon Soup Recipe
Butter- 25 grams
Fat free bacon- 75 grams
Garlic- 1 clove
Celery- 1 bunch
Chicken stock- 1.75 litres
Potato- 450 grams
Canned sweet corn- 350 grams
Salt- To taste
Black pepper powder- To taste
Chopped parsley leaves- 2 teaspoons
Slit green chilli- 1 (Seeds taken out)
Method of Preparation:
1. Place a frying pan on the flame, add the butter and let it melt. Now add the bacon and fry till it turns golden brown and crisp. Take out the fried bacon with the help of a spoon and put it on a plate. Keep aside for later use.
2. Chop the onion, garlic, carrot and potato into small pieces. Cut the celery into 2 inch pieces. Add the onion and garlic to the remaining butter in the pan and fry until they develop a light golden colour. Next, add the chopped carrots and celery and continue frying for 4-5 minutes. Now add the chicken stock followed by potato and two-thirds amount of sweet corn. Before using the sweet corn drain out the water and then put in the frying pan. Add salt and pepper powder and stir the soup. Cook on medium flame and let it come to a boil. Allow it to cook for 15 minutes.
3. Check to see whether the potato has got completely boiled. Now pour the soup in a big bowl and allow it to cool down. Next, pour the soup into a blender and blend really well. Strain the soup through a sieve and pour into a separate bowl.
4. Put little butter into a pan and let it melt. Pour the soup into the pan and let it boil for 2 minutes. Now add the chopped parsley leaves, green chilli, fried bacon and remaining sweet corn.
Stir the soup so that all the ingredients get mixed together nicely. Turn off the flame after 5 minutes. Serve steaming hot.
