Recipe Ingredients

Steamed Rice – 1½ cups
Kashmiri red chilies, dry – 2 whole
Mustard seeds – ½ teaspoon
Split black lentils (Urad Dal) – ½ teaspoons
Ginger, grated – ½ teaspoon
Roasted bengal gram (chana dal) – 1 teaspoon
Curry Leaves – 4 to 5
Turmeric Powder – 1/8 teaspoon
Asafetida – a pinch
Lemon Juice – ½ tablespoons
Oil – 1 teaspoon
Salt – as per taste

For the Garnish

Chopped coriander – ½ teaspoon

Recipe Preparation

1.    Heat oil in a deep bottomed pan or a frying pan.

2.    When it gets hot, add the mustard seeds, ground nuts, Bengal gram, and chopped green chilies to it and sauté for few seconds.

3.    Next, add asafetida and turmeric powder to the oil and fry for about 2 minutes.

4.    Once fried properly, add steamed rice to the mixture and mix well till all ingredients are mixed properly with the rice. Add salt according to your taste and mix properly.

5.    After this, add the juice of a lemon into the rice and mix till the entire rice preparing gets an essence of the lemon juice. Bring the rice off the heat.

6.    Finally, garnish using finely chopped coriander leaves and serve immediately.

Important Points to Keep in Mind

•    Make sure not to squeeze the lime too much as over-squeezing can bring a bitter taste to the lemon essence and make the entire dish bitter-tasting.
•    Do not heat the rice for too much time after adding lemon juice to it as this can also make the entire dish bitter.
•    Make sure to use all the ingredients in the same quantity as mentioned above.


Lemon Rice is a wonderful dish from South India that can easily be prepared when you are in a hurry or do not have much time to prepare a gourmet meal. It can also be prepared using left-over rice. It works great when served with Yogurt or Raita, and Poppadums or any curry of your choice. The combination forms a simple yet scrumptious dish suitable for a light meal.
