Both chicken and mushroom are important and very popular ingredients in Chinese cooking. This simple dish can also be tweaked and modified or changed in accordance with your taste and preference. On days when you do not want to cook any thing fancy, but surely something delicious, make this awesome dish to impress your family or friends.

Ingredients

six boneless chicken breast pieces, cut into small cubes
one cup of sliced white mushrooms or button mushrooms
4 oz  diced carrots
8 oz diced onions
1 oz chopped garlic
4 oz sliced zucchini
4 oz spring onions
2 red chilies
4 tablespoon sesame oil
2 tablespoon corn flour
half cup water
salt to taste

For The Sauce

one tablespoon soy sauce
one tablespoon fish sauce
one tablespoon sugar
2 tablespoon sesame oil
salt to taste

To Make The Sauce

Just mix all the ingredients for the sauce together and keep aside for fifteen minutes or so. You may use oyster sauce as an alternative to fish sauce if you like. Both have a strong flavor and both work very well for the dish. However, you may choose the one that suits your palate better.

Method Ff Cooking

Heat The Oil In Frying Pan

1. Marinate the chicken with salt and pepper for half an hour. Heat the oil in a deep bottom frying pan. Add the red chilies, onion and the chopped garlic. Saute for two to three minutes and then add the chicken and the mushrooms. Fry for three to five minutes and then add the sauce that has been made and kept aside. Make sure that the sauce coats the chicken and the mushroom well. Do not cover, and cook on a medium flame for ten minutes. A medium flame will ensure that the sauce gets into the chicken and the mushroom and adds the flavor well.

2. Once the chicken looks half cooked, you need to add the carrots, spring onions and the zucchini . Sprinkle salt sparingly. Remember that soy sauce contains salt already, so too much of salt can ruin the dish.  Stir occasionally and sprinkle a dash of sugar. Add the water and cook for fifteen minutes. If you think you want to thicken the sauce, you may now add the corn flour and cook for another five to six minutes.

3. Serve it hot with a bowl of steaming hot fragranced rice for a rich aromatic gourmet experience. You may choose jasmine or rosemary fragrances for the rice. A stickier variety would work the best in this case. Green tea is a great drink to complement this recipe. It refreshes the senses and balances the flavors in your mouth.
