chicken breasts
4-6 stalks of green onion
3-4 tablespoons of sesame seeds
2 fine slices of ginger, minced

For The Batter:

1 ½ cup of all-purpose flour
2 teaspoons of baking powder
1 ½ teaspoon of salt
6 tablespoons of cornstarch
1 ½ cup of cold water
2 large eggs

For The Marinade:

½ cup of soy sauce
2 teaspoons of dry sherry
2 tablespoons of sesame oil
3 large cloves of garlic, minced
1 ½ teaspoon of ground ginger
5 stalks of green onion

For The Sauce:

16 ounce of low sodium chicken stock
2 tablespoons of corn starch
4 tablespoons of vinegar
4 tablespoons of dark soy sauce
2 tablespoons of sugar
2 teaspoons of salt
2 tablespoons of sesame oil
2 tablespoons of hoisin sauce

Method Of Cooking:

1. Take a bowl and mix the flour, cornstarch, baking powder, and the salt in it. Stir the dry ingredients and mix them with a spoon. Next, take another small bowl and crack open the eggs in that. Whisk the eggs thoroughly and then add the whisked eggs to the flour mixture. Once the flour mixture turns into a soft dough like thing, start pouring over the water in a thin stream and whisk the mixture continuously while adding the water. Once you get a homogenous batter, stop mixing and set it aside for 45 minutes to 1 hour.

2. Next, chop the chicken into small bite sized pieces and mince the ginger. Now it’s time to prepare the marinade for the chicken. For that, take a clean bowl and combine the soy sauce, sesame oil, dry sherry, green onions, minced garlic and the ground ginger in it. Stir it all up and then fetch a heavy duty plastic zip lock bag. Next, rinse the chicken pieces thoroughly and pat them dry with a paper towel. Transfer the rinsed chicken pieces to the plastic zip lock bag and pour the marinade over the chicken pieces.

3. Seal the plastic bag while trying to force out maximum air from it, and keep it in the refrigerator to allow the chicken to sit in the marinade for at least 1 hour. In the meantime, you can prepare the sauce for the sesame chicken. For that combine the soy sauce, chicken stock, sesame oil, hoisin sauce, vinegar, salt and sugar in a bowl and then keep it aside. Once the marinating time elapses, take out the chicken from the refrigerator and drain the marinade to collect only the chicken pieces.

4. Once done, heat up some oil in a wok or skillet and then fetch the bowl of batter near you. Dip all the chicken pieces in the batter and fry them immediately in the hot oil. Flip and fry the chicken pieces until they are nicely browned. Once done, spoon out the chicken pieces and keep them on a paper towel lined plate. Once you are done frying all the chicken pieces, set them aside in a plate and remove the wok from the heat.

5. Next, pour the sauce in a sauce pan and heat it up on high flame, until it comes to boil. Once the sauce comes to boil, dissolve the cornstarch in a bit of water and prepare a slurry. Add the slurry of corn starch to the sauce. Give a brief stir to the sauce and then turn off the flame. Finally, place the chicken pieces in a bowl and pour the thick sauce over them.

Stir the chicken pieces to coat them nicely with the sauce and then finally, sprinkle some sesame seeds and the chopped green onions on top. You may serve the delicious sesame chicken with warm fluffy rice, to get the best out of it.
