Can there be anything more wonderful than having a slice of moist and velvety carrot cake with a cup of strong tea on a balmy evening? Carrot cakes are not that difficult to bake. The trick to baking a light and fluffy carrot cake is to make sure that you do not over mix the ingredients.

Over mixing the ingredients will make the cake dense and hard which is not at all great to eat. Ideally you should grate the carrots with the help of a grater. However, a food processor works quite fine. Here are the step by step instructions for making a really yummy carrot cake.

3 large eggs
1 1/3 cup all-purpose flour
1 cup vegetable oil
1 1/3 cup soft brown sugar
2 cups grated carrot
1 teaspoon baking soda
1 ¼ teaspoon vanilla extract
¼ teaspoon salt
1 teaspoon ground cinnamon
¼ cup golden raisins
¼ cup chopped pecans and walnuts
¼ teaspoon ground ginger
¼ teaspoon ground nutmeg

For the Frosting

250 g cream cheese
50 g softened butter
2 cups icing sugar
1 teaspoon vanilla extract


First, preheat the oven to 350 degree F. Grease a cake tin with a bit of oil and line it with parchment paper. Keep it aside. In a medium-sized bowl, add the all-purpose flour, baking soda, and baking powder, salt, ground cinnamon, ground ginger and ground nutmeg. Mix all these ingredients together until everything is combined well.

In another bowl, crack the 3 eggs and whisk the eggs. Add the soft brown sugar, vegetable oil and vanilla extract and beat this mixture slowly until the sugar has dissolved completely. Now, add the dry ingredients that you had kept aside to this mixture. Gently fold in the mixture with a wooden spoon or spatula. Next, add the grated carrot to this mixture. Make sure that you squeeze out the excess juice from the grated carrots before you add them to the cake batter. Otherwise the cake will become too soggy.

Remove the carrot cake from the oven and allow it to cool.

To prepare the frosting, take a medium-sized bowl and add the cream cheese and softened butter. Beat the two ingredients together until it is well combined. Next, add the icing sugar and vanilla extract and mix well. Once you have a thick spreadable consistency, use a spatula to spread the frosting on top and sides of the cake. Make sure that the icing is spread evenly over the cake.
