Chocolate Chiffon Cake

Chocolate Chiffon Cake

Ingredients (Fop 5 Persons):

3 eggs
1 1/2cups sugar
2  big cups of refined flour
1 tea spoon salt
3/4 tea spoon soda
1 cup cocoa powder
1 tea spoon baking power
1/2 cup refined oil
1 cup well beaten yoghurt.

Method

Pre-heat the oven to 200 degrees celsius.Sieve the flour,cocoa, soda and baking powder and keep aside. In a vessel seperate the eggs from the whites. With an electric beater start to beat the eggs till they become frothy. Continue to beat till stiff.

Cream the sugar and oil and beat well till it is smooth. Whisk in the flour, cocoa,soda and baking powder. Mix well with a wooden spatula.

In a separate vessel beat the egg yolks and to it add the yoghurt. Now gently whisk in the beaten egg whites. Fold this mixture into the whisked flour mixture. Bake in a long bread loaf tin for 40-50 minutes at 180 degrees celsius.

Frost the cake with cherry and butter frosting.

Eggless Fruit Cake

Eggless Fruit Cake

Ingredients (Fop 5 Persons):

90 gms margarine
90 gms sugar
240 gms flour
1 tsp bicarbonate soda
1 tsp spice
¼ pint milk
360 gms mixed dried fruit
60 gms chopped candied peel

Method

Cream the margarine and sugar until soft. Sieve flour, soda, baking powder, if used, and spice. Work this into the margarine together with the milk. Whisk well. Lastly add fruit and peel. Leave in a bowl overnight.

The next day stir again and put into a 7-inch cake tin lined sufficiently greased and floured Bake for 2½ hours in a very moderate oven. (350o F/Gas mark 3).

Pavlova Cake

Ingredients (Fop 5 Persons):

3 egg whites
300 gms castor sugar
180 gms can of pure cream or ½ pint fresh,
double cream
1 small can fruit or 250 gms fresh fruit

Method

Draw on a greaseproof paper an oval or a round, 8-inches in diameter and place it on a greased tray. Whisk egg whites and castor sugar until very stiff.  Add colour to suit taste. Place it in a piping bag fitted with a vegetable star pipe. Pipe small, round whirls over the entire centre. Pipe round the edge building it up to form a wall. Bake in a very slow oven (200o F/Gas Mark 4) for 2-3 hours until dry and crisp.
