Recipe for Homemade Vegetarian Cheese Pizza

Preparation time: 30 minutes
Baking time: 10 minutes (each)
Servings: 4

INGREDIENTS

For making Pizza dough

1 cup Plain flour (Maida)
1 teaspoon Yeast (Dry Active Yeast or Fresh Home-made Yeast)
1 tablespoon Olive Oil
1 teaspoon Sugar
Pinch of salt (1/4 teaspoon)
Lukewarm water as required

For making Pizza toppings

2 small Onions, sliced
5-6 Button mushrooms, sliced
2 medium tomatoes cut into thick strips
1/2 cup Green and red bell pepper cut into thick strips
1 cup Mozzarella cheese, grated
1/2 cup of sweet corn, boiled
1 tablespoon of Olive oil
1/2 teaspoon of mixed herbs
Salt to taste

For making base sauce  

1 tablespoon of Olive oil
1 small onion, finely chopped
2-3 Garlic cloves, finely chopped
2 Tomatoes, finely chopped
Few leaves of fresh basil
1-2 whole dry red chilles, crushed
1 teaspoon ground Black pepper
Salt to taste

Method of preparing Pizza base

Sieve the plain flour in a large plate and add some salt and olive oil to it. Mix well. Next, add the yeast and sugar to the lukewarm water, mix well using a fork and leave for a few minutes or until frothy. Then pour this yeast mixture into the flour. Mix well and add water slowly as required to knead the dough.

Using your hands knead the dough thoroughly for about 10-12 minutes until it becomes soft and pliable. Lightly grease the soft dough using some oil. Cover the dough with a kitchen towel and let it rest in warm place. This dough will take at least 2-3 hours to rise and get double in size. While the dough is getting ready let us prepare the pizza toppings and the base sauce.

Preparation for Pizza Toppings

Wash and slice Mushrooms and onions. Also wash tomatoes, red, green bell pepper nicely and take out the seeds and stems from them before cutting them into thick strips. Heat oil in a pan and toss the chopped vegetables and sweet corn. Stir fry for a minute on a medium high flame. Add salt and mixed herbs and sauté for 3-4 minutes or till all the vegetables are soft. Remove from the flame and keep aside.

Method of preparing the base sauce

Peel the onions and garlic and chop them finely. Also chop the tomatoes. Heat olive oil in a non stick pan and add chopped garlic. Sauté for a minute or until aromatic. Add chopped onions and cook for about 2-3 minutes or until they turn translucent. Then add tomatoes, basil leaves, salt and black pepper. Let it simmer for about 5-10 minutes. Let it cool down and blend it in a blender to make a smooth puree. Remove it in a bowl and keep aside.

How to make Pizza

Preheat the oven at 250 Degree Celsius. Divide the dough into equal sized balls. Dust the work surface and the ball with little dry plain flour and roll it into round 10-12 inch disc using a rolling pin. Make sure that the Pizza base is thick from the corners. Place this pizza base on a baking tray.

Smear the base sauce over the pizza base and spread it out evenly in all the directions. Now place the toppings followed by spreading shredded Mozzarella cheese to evenly cover the pizza top. Do not overload the pizza with the toppings.

Put the tray inside the preheated oven for about 8-10 minutes or until it turns crispy and the cheese melts. Repeat the same procedure to make the remaining pizzas. Your lip smacking Pizza is ready to relish. Cut it into slices and serve hot with Pepsi or coke!

Tips

1) If you want you can store the extra dough in your refrigerator and use it for the next 5-6 days.
2) Ensure that you are using yeast to prepare Pizza dough as it is the main ingredient to make dough for Pizza Base.
