Recipe For Green Thai Curry

Thai green curry is an aromatic and nutritious curry cooked with assorted vegetables and tofu. Thai green curry is sweet and spicy. Coconut milk gives it a smooth and silky taste. Spices like coriander seeds, galangal, kaffir lime leaves, cumin and pepper corn gives it a, distinguished and mouth watering aroma.

This curry can be made with all kinds of meat. Most commonly used are pork, beef, chicken and fish. Rice is the heart of Thai food. No meal is complete without steamed rice.

Vegetable Green Thai Curry

Preparation time: 15 minutes
Cooking time: 25 minutes
Serves: 4- 6


Green curry paste

1 stalk lemon grass finely chopped
1″ galangal piece grated
7-8 cloves garlic
1 small onion chopped
1 teaspoon brown sugar
1 teaspoon coriander seeds
1 teaspoon cumin seeds
2-3 chopped fresh kaffir lime leaves
½ cup coriander leaves
¼ cup basil leaves
2 tablespoon dark soy sauce
1 teaspoon salt
½ teaspoon pepper
3-4 green chillies chopped
For coconut milk
1 ½ coconut grated
3cups hot water

Other Ingredients

1 table spoon sesame oil
3-4 kaffir lime leaves
½” galangal crushed
1/2 cup chopped button mushrooms
100 grams French beans cut into 1’’ pieces
½ cup carrots cubed
½ cup cubed tofu
½ cup broccoli florets
½ cup snow peas
½ cup baby corn sliced
½ cup yellow, red and green capsicum diced
Salt to taste

For garnish

2 tablespoons chopped fresh basil


Coconut Milk

Soak grated coconut in hot water for 3 hrs. Blend in a blender. Strain and keep aside.

Thai Green Curry Paste

Heat a pan, roast cumin seeds and coriander seed separately for a minute. In a blender grind all the ingredients of the green curry paste with a little coconut milk. Grind it into a smooth paste.

Thai Green Curry

1. Heat oil in a wok. Keep the flame medium high. Put green curry paste and cook till it leaves the sides. Add coconut milk, crushed galangal and kaffir lime leaves. Bring to a boil. Add tofu, broccoli, carrots, French beans and mushrooms. Boil for 2-3 minutes

2. Add other vegetables and ingredients. Cook for 5 more minutes and turn off the flame. Garnish with chopped fresh basil. Serve with plain steamed rice or jasmine flavoured steamed rice.

Preparation time: 20 minutes
Cooking time: 40 minutes
Serves: 4 -6


1/2 kilogram boneless and skinless chicken cut into small pieces.
4 tablespoon dark soy sauce
2 teaspoon crushed garlic
7-8 kaffir lime leaves
3 tablespoon green Thai curry paste
1’’ galangal grated
3 tablespoon all purpose flour
3 to 4 spring onions chopped
2 cups coconut milk
1 teaspoon fish sauce
½ cup oil
Salt to taste
½ teaspoon white pepper powder
Chopped cilantro for garnish


1. In a bowl put 1 teaspoon garlic paste, 1 teaspoon grated galangal, ½ teaspoon salt, 2 tablespoon soy sauce. Marinate the chicken and keep aside for ½ an hour. Fold the chicken pieces in all purpose flour and coven them properly. Heat oil in a pan and shallow fry the chicken pieces till golden brown.

2. Take out the chicken pieces in a plate. In the same pan shallow fry the onions and garlic paste. Add the green curry paste and fry till it leaves sides.

3. Mix coconut milk, kaffir lime leaves and galangal. Boil Add fish sauce , chicken pieces and rest of the ingredients except cilantro. Boil for 5 minute. Garnish with cilantro. Serve hot with steamed rice.
