Ingredients Required for Chocolate Mousse Cake

For Sponge Cake

Eggless sponge cake mixture: 1 packet
Prepare the chocolate sponge cake as per the directions given on the packet.

For Chocolate Mousse

Dutch-processed cocoa powder – 3 large tablespoons
Grated Dark Chocolate – ½ cup
Milk – 1 ¼ cups
China grass – 5 gms
Custard Powder – 1 teaspoon
Heavy cream, whipped – ½ cup
Pure Vanilla extract – ½ teaspoon
For soaking syrup:
Water – ½ cup
Sugar – 1 tablespoon

Mix the two ingredients until sugar is completely dissolved in water.

For Garnish

Whipped Cream – 1 cup
Grated Chocolate – 1 cup

Method of Preparation of Chocolate Mousse Cake

1. Bake the sponge cake mixture and cut the cake in two layers.

2. Prepare chocolate mousse: soak china grass in about 8 ounces of cold water for 60 minutes. Then place it over medium heat until the china grass dissolves completely in water.

3. Put one cup of milk over medium flame and add sugar, cocoa powder and dark chocolate in it.

4. In the remaining ¾ cup of milk add dissolved custard powder and bring the mixture to boil over low flame. When the custard begins to boil add the dark chocolate mixture to it and cook for a minute over medium flame.

5. Pour completely dissolved china grass in the above mixture and cook for a couple of minutes over medium flame.

6. Take the mixture off flame and strain it using a muslin cloth. Keep stirring the mixture until it completely cools down.

7. To this now add whipped cream and vanilla essence. Gently fold in the whipped cream into the mixture. Chocolate mousse is ready.

8. Take one layer of the sponge cake and place it at the bottom of a cake tin. Pour soaking syrup over the cake and then pour chocolate mousse.

9. Put the cake tin in the refrigerator and leave for 30-40 minutes or until it is set.

10. Before serving, take the cake tin out garnish the chocolate mousse layer with whipped cream, chopped walnuts and grated chocolate.

You can even use chopped cherries and raspberries for decoration. The other layer of the sponge cake can be used for preparing a second chocolate mousse cake using the above given recipe.
