Sometimes, the simplest of recipes create the most stunning dishes. You may not have to put a score of ingredients that you have never heard of before, but you certainly are going to present a dish to your guests or family, that they are going to absolutely adore!
Chicken as we know is an extremely versatile ingredient. There are innumerable ways in which you can make chicken taste heavenly. Pita pockets are often popularly stuffed with various kinds of chicken filling. When the chicken is made in combination with rocket, the entire dish gets a fresh, crunchy and leafy twist that you are going to enjoy at every bite!
Preparation Time: 10 minutes

4 pita bread slices, cut into halves
2 chicken breast pieces
two cloves of garlic chopped
4 tablespoons of melted butter
half a cup of mayonnaise
one tablespoon of lemon juice
half an onion, chopped
half a cup of chopped cherry tomatoes
2 tablespoon of pesto sauce
20-25 rocket leaves
2 tablespoon of extra virgin olive oil
salt and pepper
Method Of Cooking
Marinate the chicken in garlic, salt and pepper for 30 minutes. Leave it aside in the refrigerator.
In a skillet, heat 3 tablespoon of melted butter and add the marinated chicken pieces. Let them cook over medium heat for fifteen minutes till the chicken is not pink anymore. You may now dice the chicken or cut it into tiny cubes. Just make sure you cut them to a size that is no less than a mouthful. Some people like to shred their chicken for the mix, but I’d suggest you dice the chicken to get little meaty chicken surprises in every bite.
Now in a large mixing bowl, add the mayonnaise, the tomatoes, the chopped onions, the pesto sauce, the lemon juice, the rocket leaves, the extra virgin olive oil and the diced chicken pieces. Sprinkle salt and pepper to season. Mix all the ingredients well with a wooden spatula. If the mixture looks too thick, you may add more olive oil to get a thick sauce like consistency.
Once the mixture is ready, get your pita pockets and butter the insides. These pita pockets now need to be stuffed with our chicken and rocket mix. Stuff the pockets lightly enough to be eaten comfortably. Once ready, you may put the stuffed pita pockets into the oven for five to seven minutes. The butter that was applied to the insides of the pita bread pockets will moisten the bread and make it softer and more sumptuous. This process of putting the stuffed pockets into the oven will warm the pita bread and will give the stuffing a gooey mouthwatering consistency that you will never be able to forget! Take them out of the oven and serve immediately.
Serve these yummy little chicken and rocket pita pockets with a bowl full of crispy crunchy freshly made French fries and some chilled beer. This is a brilliant recipe idea for your or your family’s lunch box too! You may also make the stuffing mixture and store for three days. Just put it into the pita pockets before eating.
