Cherry Clafouti Recipe Cherry clafouti or clafoutis is a French dessert generally made of black cherries. The cherries are arranged in either a rectangular or round dish and are then covered with a smooth runny batter. The cherries pop out of the batter and look like jems studded in a plate. The sweet dish is perfect for parties, as it requires very little efforts and a very little time to arrange and bake it.

Appliances Required

1 sauce pan
1 handheld or standing electric mixer
1 9-ich round baking pan
1 rubber spatula
1 stirring spoon
1 small wire mesh strainer

Ingredients Required

½ cup of plain all-purpose flour
½ cup of milk (at room temperature)
400 grams of sweet cherries (pitted)
2 tablespoons + 1 teaspoon of kirsch
2 tablespoons of white granulated sugar
2 large eggs
2 tablespoons of white granulated sugar
1 tablespoon of whipping cream
2 tablespoons of confectioner’s sugar
11 teaspoon of pure vanilla extract
2 teaspoons of butter (salted or unsalted)
A pinch of salt
Crème fraiche or whipped cream, for serving

Method Of Preparation

1. Preheat your oven to 425 degrees Fahrenheit and set the oven rack at the middle part of the oven. Now take a heavy ovenproof baking dish and grease it thoroughly with butter or oil. But make sure that you generously grease the base and the sides of the baking pan.

2. Now set a mixing bowl on the standing electric mixer and sift the flour in it. To that, add the 2 tablespoons of white granulated sugar and the salt. Stir the mixture with a rubber spatula and then break open the eggs to empty their contents in the mixing bowl

3. Finally, add the milk, whipping cream and the vanilla extract to the flour. Attach a paddle attachment to the mixer and set it on low. Whisk the batter on low speed for a few seconds or until the flour mixture is moistened with the wet ingredients.

4. Then increase the speed to medium high and continue whisking the batter for 50-60 seconds. Once done, scrape down the sides of the bowl to extract the sticking batter and then whisk again for another 10 seconds. Once ready, let the batter remain in the bowl and rest for some time.

5. Take the cherries and remove the seeds and stems from them. Rinse the cherries in water and pat dry with paper towels. Now take a large skillet and place it on the stove. Light the flame and maintain it on medium. Add the butter to the hot skillet and wait for it to melt completely.

6. Once that happens, add in the rinsed cherries and the kirsch and fry the cherries until they turn soft and are nicely coated with the butter. Follow that by adding the remaining 2 tablespoons of sugar. Continue cooking the cherries until the sugar completely dissolves and forms thick syrup.

7. Once done, pour the syrup along with the cherries in the prepared baking pan and pour the batter all over the cherries. Insert the baking tray into the preheated oven and bake for about 20-25 minutes or until the clafouti rises up and is slightly browned around the edges. Once done, dust the confectioner’s sugar all over the clafouti and serve immediately with crème fraiche or whipping cream.
