Recipe For Black Bean Soup

2 cups black beans
1 medium sized onion
1 green bell pepper
4 garlic cloves
1 small stalk celery
1 cup orange juice
½ cup lemon juice
1 tsp freshly ground cumin
1 tsp ground coriander
2 tsp oregano
¼ cup cayenne pepper or chipotle chili
1 tbsp olive oil
¼ cup sour cream
Clean, rinse and wash the black beans thoroughly. Soak them in a large bowl containing water for 8 hours or overnight. Place a large pot containing water on a medium flame. Add the soaked beans to the pot. Bring the water to a boil. Reduce the flame to low, cover and boil the beans for about 30 minutes. When the beans are half cooked, remove the pot from fire.
Alternatively, pressure cook the soaked black beans on a medium flame for 2 whistles.In the meantime, mince the garlic and chop the onions. Cut the carrot and bell pepper into small cubes. Dice the tomatoes and chop the celery with the stalk finely. Keep the cut ingredients aside.
Place a skillet or pan over a medium flame and add a tablespoon of oil. Add the chopped onions and minced garlic. Saute the onions until they turn light brown. Stir in diced carrot and bell pepper. Add chopped celery to the skillet. Saute the vegetables for 2 minutes. Add ground cumin and coriander to the skillet. Saute the vegetables until they become tender, this will take about 8-10 minutes.
When the vegetables become soft, add the contents of the skillet to the pot containing black beans. Put the pot back on the stove. Add a few cups of water if necessary. Add cayenne pepper, oregano and salt to the pot. Cover and simmer for 10 minutes.
Take half of the soup from the pot and place it in a food processor. Blend the soup until you get a smooth, silky liquid. Transfer the pureed soup to the pot and adjust the seasoning. Add orange juice and lemon juice to the pot. Stir and simmer the soup for another 15 minutes.Your Brazilian black bean soup is ready.
Ladle the soup into bowls and garnish with a tablespoon of sour cream. You can use yoghurt instead of sour cream. Sprinkle cilantro leaves on top and serve hot. Black bean soup can be complemented with tacos or toast.
