The Anzac biscuits or Anzac cookies (as they are known in America) get their name from ANZACs who were the soldiers of Australian and New Zealand Army Corps during World War One.
The women from Australia and New Zealand would make crunchy biscuits and send them to the war front. The ANZAC soldiers were posted mainly across the seas. However, the biscuits would survive the trails of time without losing their crispness and freshness. As a result the biscuits became a staple diet of the soldiers during world war.
Initially the biscuits were referred to as the ‘Soldier Biscuits’ and were prepared using plain flour, milk powder, sugar and water. However, in these financially easier times the biscuits also contain golden syrup, butter and desiccated coconut.
The Anzac biscuits are quite popular throughout the world but they hold a special place in the lives of Australians and Kiwis who celebrate the ANZAC Day every year in the month of April. Anzac biscuits are made this day to remind people of the day’s historical importance. We give you a simple recipe to prepare the perfect Anzac biscuits. Mix all the ingredients together using a wooden spatula. You will have a dough-like consistency biscuit batter. Knead the dough well so that it becomes soft and there aren’t any lumps in it.
Prepare small-sized balls of the dough and flatten the balls using the palms of your hands. You will have around 12-15 biscuits ready to be baked. Take out the already prepared baking tray and transfer the flattened dough onto the baking tray.
Remember to keep a distance of at least 4 cm in between each biscuit because the dough will spread and rise upon baking. Do not over-bake the biscuits. Keep them in the oven for not more than 12 minutes.
Remove them from the oven but keep them on the tray for another 5 minutes. This way the biscuits will still continue to be baked without being burnt. Take out the biscuits from the tray and put them on the wire rack to allow cooling.
Your Anzac biscuits are ready to be consumed. Transfer any left-over biscuits into an air-tight jar.
