Hash is perhaps the easiest and the yummiest ways to recycle leftovers into delicious food. It has been popular with people in the army for it’s filling quality, among the cowboys and among us all because it hardly has any hard and fast rules, is absolutely simple to cook and most importantly, is an all in all meal in itself.
So, on days when you do not have the time or the inclination to cook, make this easy basil chicken hash. It will not only fill you up but will leave you wanting for more!

4 chicken breast pieces slit into butterflies
12 to 16 fresh basil leaves
4 large potatoes
1 large onion chopped
2 cloves of garlic chopped
1 tablespoon of thyme
1/2 cup of bread cubes
1 stick of butter
4 tablespoon of olive oil
salt and pepper to taste
1 teaspoon fresh or dried oregano leaves
1/2 cup chicken stock
1 tablespoon chopped parsley
juice of 1/2 a lemon
1 green bell pepper diced
To begin with bring a pot of water to boil and add the potatoes until they become soft. This should take around 10-15 minutes. Once they are soft and tender dice them and keep aside. To make the basil chicken place 3-4 basil leaves into the pockets that have been made on the chicken breast. Secure the ends with a toothpick.
Sprinkle salt and pepper on the chicken and drizzle some olive oil. In a large skillet heat the butter and stir in the chicken breasts. This should be done over a medium flame. The chicken can also be roasted or grilled with the basil leaves intact. The point is that the chicken needs to be basil fragranced and you may do it in any way you like. The fragrance of the basil leaves will get infused in the chicken while the crust will be fried golden brown. Once both the sides of the chicken are fried, take it off the heat and dice or shred it. You may leave the basil leaves or discard them.
In a large saute pan heat the oil and add the thyme over medium flame. Add the onions, the garlic, green bell pepper and finally the diced boiled potatoes. Fry these ingredients till the potato has a thin golden brown crust and the onions turn golden as well. You may now add the chicken to this mix. Give the whole thing a good stir and add the bread cubes. In order to add some moisture add the chicken stock. Stir for 5-7 minutes till the stock is mostly absorbed. Add the chopped parsley and the oregano. Sprinkle salt and pepper to taste.
You may tweak the recipe and use few other ingredients that are available. For example if bell peppers are not available, you may add zucchini or any other vegetables. If you want to spice up the dish further you can add smoked paprika or cayenne. The best to serve the basil chicken hash is to take it off the heat and serve it immediately with a dash of lemon juice. A mug of beer compliments this simple dish a lot. This hash is perfect of a brunch, a lunch or in fact any meal of the day.
