Pineapple Fried Rice If the Chinese created a delicacy called fried rice, their neighbor Thailand moved a step further to concoct the sinful pineapple fried rice. This recipe is not only succulent, flavorful and tasty but healthy and enticing too.

No wonder it is usually referred to as heavenly pineapple fried rice in Thai restaurants. If you are looking for a recipe to impress your family or guests, pineapple fried rice might be the one for you. This recipe is a classic example of a vegetarian Thai dish, although the variations include the addition of ingredients like shrimp, fish, chicken, etc.

In Thai restaurants, this recipe is usually served in a scooped out pineapple shell.  Make this recipe for a get together or a party and enjoy the compliments that come after.

Ingredients for Pineapple Fried Rice

2 cups pineapple chunks
3 cups rice
4 shallots, sliced
½ cup peas (frozen)
3 cloves, minced
4 green chilies, chopped
3 tbsp cashew nuts, chopped
2 tbsp soy sauce
2 tbsp raisins
2 tbsp oil
2 tbsp freshly ground pepper (optional)

For Garnishing

¼ cup spring onions, finely chopped

Method of Pineapple Fried Rice

Cut the pineapple lengthwise into two equal halves with a help of a sharp knife. Choose a half whose base is sturdy enough to make a pineapple boat. Do not trim the leaves. Use a knife to scoop out the fleshy part without causing any damage to its outer covering.

When the chunks have been scooped out, you will get a hollow pineapple shell which resembles a bowl or a boat. Use this boat as a tray or platter to serve the pineapple fried rice.

Pineapple fried rice tastes better when the cooked rice is at least a day old. Hence, cook the rice before hand to enjoy the perfect pineapple rice.  If you do not have leftover rice, then you can cook the rice with the help of the instructions given below.

Wash the rice thoroughly two or three times with cold water. Cook the rice until tender in a pressure cooker or a sauce pan. Refrigerate the cooked rice for at least an hour.

Add a tablespoon of oil to the rice and mix it well with your fingers to separate the grains. Heat oil in a large wok or pan over a medium flame. Stir in garlic, shallots and green chilies.

Sauté for 2-3 minutes or until the shallots turn transparent. You can add other vegetables like carrots, bell peppers, etc. to improve the nutritional value of the meal. You can also use canned pineapple instead of the fresh fruit.

Add cashew nuts, peas and pineapple chunks to the wok followed by raisins and soya sauce. You can substitute soy sauce with fish sauce. Fry the contents of the wok for a few minutes and add the cooked rice to it.

Adjust the seasoning, reduce the heat to low, simmer and cook for a few minutes. The delicious pineapple rice is now ready. Transfer the fried rice in to the pineapple boat and garnish with spring onions. Serve the rice with a vegetable or meat curry and enjoy.
