Salads are an excellent food for summers as it is light and healthy. Tossed peachy salad made with a combination of cucumbers, onions, feta cheese and peaches is extremely tasty and healthy. This is then topped with a dressing made with sour cream, vinegar, sour cream and poppy seeds. The salad is best served with bacon and pork dishes.
It is extremely simple to make this dish and takes not more than fifteen minutes. The dressing for the salad can be made in advance and refrigerated. Here is a simple, fresh and easy peachy tossed salad recipe at home.

For the Salad
Eight cups of torn spinach
Five medium peaches cut into slices
Four bacon or chicken strips
Eight cups of torn lettuce
Half cup of sliced cucumber
Half cup of onion rings
One cup of shredded carrots
Half a cup of cheddar or feta cheese
For the Dressing
One cup of olive oil
Half a cup of sugar
Half a teaspoon of salt
Half a cup of vinegar
Two tablespoons of yogurt
One teaspoon of sour cream
Two teaspoons poppy seeds
Method of Preparation
Start off by making the dressing for the salad. Mix all the ingredients of the dressing including yogurt, sour cream, poppy seeds, vinegar, salt, sugar and olive oil in a resealable bag. Shake all the ingredients well and place the bag in the refrigerator while you make the peachy salad. Instead of the bag you can also use a glass jar with a tight fitting lid to store the salad. You can also mix all the ingredients in a blender and then store it in the refrigerator for later use.
In a large bowl add the onions, carrots, cheese, lettuce, peaches and spinach along with the bacon strips. Use a wooden spoon to mix all the ingredients well. Remove the bag from the refrigerator and drizzle the dressing on top of the salad. Toss properly or mix well with a wooden spoon so that the dressing coats the salad ingredients properly.
Top the salad with some roasted peanuts or almonds and you are now ready to serve the salad. It is important to keep in mind that the dressing has to be poured on the salad only when you are ready to serve immediately.
There are many variations to this simple dish. You can add raspberry preserves and peach preserves to the salad dressing for better flavor. Just add the raspberry and peaches to the rest of the ingredients and mix it in a blender to make a thick creamy dressing.
If you are conscious of the extra calories then just leave out the feat cheese and add some other fruit like strawberries or blueberries to the make the salad. This is a refreshing salad that can be made using the season’s freshest fruits for a really tasty treat. Serve it with grilled pork or bacon and enjoy the tasty summer salad.
