Must-Try Recipe For Rice Cake

Rice-Cake Rice is the staple diet of almost all the coastal countries especially Japan and China. Rice is eaten in a variety of forms in these countries. It is little surprise then that the legendary dish of these countries in the Rice Cake.

The Rice Cake isn’t a cake in the real sense of the term. It is not what is cooked in the bakeries and is definitely not a dessert. Instead, the rice cake is a protein rich dish that is crispy and crunchy in flavor.

The dish is also prepared by steaming which makes it very unlike the traditional method of prepared cakes. However, rice cakes are made in large quantities especially during festival time and during special occasions.

They are also treated as a healthy snack so they can be eaten every day without posing any threat to our health. A tastier version of the rice cake is prepared by frying it. This of course takes away the nutritional value of the cake. The cake can be had as it is but is traditionally served with herbal teas.

Ingredients Of Rice Cake

For First Layer

Glutinous rice – 1 cup (soak the rice for a couple of hours)
Thick coconut milk – 1 ½ cups
Pandan paste – ½ teaspoon
White sugar – 2 tablespoon
A pinch of salt

For the Second Layer

Eggs – 5
Coconut milk – 1 ½ cups
White sugar – ½ cup
A pinch of salt
Pandan paste – 1 teaspoon
Rice flour – 2 tablespoon

Method of Preparation For Rice Cake

1. Take a cake pan and grease it lightly with soil. Place the greased cake pan inside a steamer or a colander (these can be bought from any Asian stores). Cover one inch of the colander or the steamer with water.

2. Soak and drain the rice. Take a large mixing bowl and add all the ingredients given in the First Layer list to the bowl. Add the drained rice to the mixture.

3. Transfer the mixture into the cake pan and spread the rice mixture evenly in the pan. Now cover the steamer with a lid (however, skip this step if the height of the cake pan does not leave room for the lid). Place the steamer over high flame and leave for 20 minutes. Keep checking the steamer for the level of water and add more water as needed.

4. Prepare the second layer. Add eggs to a bowl and beat them for 30 seconds. To the beaten eggs add sugar, salt, coconut milk and pandan paste. Mix well. Now sprinkle some flour over the mixture. Beat again so you have a smooth batter.

5. The first layer should be ready. Use a fork to gently press down the rice so that you have an even layer. Gradually pour the second layer mixture over the prepared first layer. Reduce the flame to medium and cover the pan again.

6. Let the cake steam for 30 minutes. Check by inserting a toothpick into the second layer. It should come out clean. Your rice cake is ready. Let it cool for 10 minutes before cutting into pieces. Rice cake can be stored in the refrigerator although it’s best to consume the cake within 48 hours as steamed cakes tend to harden with time.
