Buffalo chicken wings is one of the most popular chicken recipes and were made popular by a restaurateur. Buffalo chicken wings became a very popular dish and it provided a golden opportunity for the restaurants to use the otherwise neglected chicken wings.
You can prepare them at your home as well. Traditionally it is prepared by deep frying the chicken wings and then coating them with sauce, vinegar and butter.
Certain varieties are prepared by baking the chicken wings in oven after coating with unique sauce. Ideally buffalo chicken wings should be served with blue cheese dressing and celery sticks and it can be served either as an appetizer or as a main dish.

Ingredients For Buffalo Chicken Wings
Chicken wing pieces – 36
Vegetable oil – one tablespoon
Freshly grounded black pepper – one teaspoon
Salt – one teaspoon
White vinegar – one and a half tablespoons
Cayenne pepper – quarter teaspoon
Garlic powder – 1/8 teaspoon
Worcestershire sauce – quarter teaspoon
Tabasco sauce – one teaspoon
Salt – quarter teaspoon
Louisiana hot sauce – six tablespoons
Margarine or unsalted butter – six tablespoons

Preparation of Buffalo Chicken Wings
Before starting the preparation, the chicken wing should be divided in to three pieces by cutting at the joints. The three sections obtained are called as tip, flat and drum.
Use the drums and flats to make the buffalo chicken wings and discard the tips, which can then be used for making chicken stock. Marinate the chicken wings with salt and ground black pepper. Take a deep fat fryer or deep skillet and prepare vegetable oil for frying chicken.
For a healthy recipe you can use canola oil for frying. Fry the chicken wings in batches and each batch requires six to eight minutes to fry. Thereafter take out the fried pieces and spread them on paper towels to absorb the excess oil. Then transfer the fried wings to a large bowl.
Take a small saucepan and heat the margarine or unsalted butter and add white vinegar, cayenne pepper, garlic powder, Worcestershire sauce, tabasco sauce and Louisiana hot sauce and mix well.
Depending upon your personal preference, you can adjust the hotness of the recipe. Add this mixture of sauces to the bowl containing fried chicken wings and toss them well with the chicken wings.

In the meantime, preheat the oven to a temperature of 350 degree F. Place the tossed chicken wings on an oiled baking pan. You can also spread a layer of foil on the pan to make the cleaning process easier. Bake the chicken wings for fifteen minutes. If it’s hard for you to find blue cheese dressing, you can prepare it at home itself.
For this, mix one cup mayonnaise, two tablespoons finely chopped onion, 1/3 cup of chopped fresh parsley, one tablespoon finely chopped garlic, one tablespoon each of lemon juice and white wine vinegar, half cup sour cream, quarter cup crumbled blue cheese and salt and pepper to taste, in a small bowl.
Mix them very well and keep it in refrigerator till the wings get ready. If you prefer chilled blue cheese dressing, make it in advance and keep in refrigerator for chilling. Now spread the buffalo chicken wings on a serving platter along with celery sticks and keep a bowl of blue cheese dressing in the center. The above recipe will be enough to serve six people.
