Chicken Tortilla Soup

This soup is not only healthy and nutritious but is also packed with flavours and texture and is said to be a meal by itself.

Ingredients Required

1 cup carrots, finely diced
1 cup chopped onions
500 grams or 1 can of tomatoes
1 cup celery
1/2 a teaspoon garlic powder
salt, as per taste
1 cup milk
1/4 teaspoon pepper powder
2 tablespoons of corn oil
4 cans of chicken broth
500 grams or 1 can of Rotel tomatoes & chilies, finely diced
1 packet taco seasoning
corn tortillas
400 grams boneless chicken poached and diced
300 grams Mexican blend cheese, shredded

Method of Preparation

1. Heat corn oil in a large saucepan and saute the onions and carrots, add in salt pepper and garlic powder and further saute, until tender.

2. Add the chicken broth and once it comes to a boil add in the tomatoes, chicken and taco seasoning. Let the broth simmer for a few minutes and then add in the tortilla pieces.

3. Further boil the broth for another 10 to 20 minutes, stirring occasionally, reduce the heat and add the cheese. Add in the milk and further simmer for 10 minutes.

4. Garnish with shredded cheese and tortilla chips and serve hot. This soup takes about 50 minutes to cook and can serve up to 8 persons.

Chicken Tortilla Soup

Chicken Enchilada Soup

Enchilada Soup is the quickest, healthiest and the best way to satiate ones hunger. Although a little spicy this soup soothes the body after a busy day of work.

Ingredients Required

1 cup finely diced chicken, (Cooked)
3 cups chicken broth
1 can cream of chicken soup
400 grams black beans, soaked and drained
1/2 cup onion, finely chopped
1 can enchilada sauce (can be easily procured at any departmental store)
400 grams fresh tomatoes, finely chopped
1/2 cup capsicum, finely chopped
400 grams frozen corn
1 tablespoon oil
salt, as per taste
shredded cheese for garnishing

Method of Preparation

1. Heat oil in a large saucepan, and saute the onions and capsicum for about 5 minutes and then add in all the remaining ingredients.

2. Mix until all the ingredients have blended together and simmer for about 10 to 15 minutes. Garnish with shredded cheese and serve hot.

This soup takes about 25 minutes to make and serves up to 6 persons.

Mexican Menudo Soup

Not only is this soup synonymous of Mexican cuisine but is also one of the best known cures of a hangover. It is traditionally made on special occasions.

Ingredients Required

600 grams of veal knuckle,
1kg beef tripe, cut and diced
3 cloves of garlic
1 large onion
5 to 6 peppercorns
4 liters water
3 large ancho chilies
canned green chilies, peeled
100 ml hominy, drained
oregano and salt as per taste

Method of Preparation

1. In a large saucepan add the veil, beef and water and water and bring to a boil. Lower the gas and simmer the broth for about 2 hours.

2. Simultaneously, roast the chillies in an oven until the skin begins to darken. Cut the chillies and add to the simmering broth, add the hominy and salt and further simmer for 2 hours. Sprinkle the broth with oregano and serve hot.
