Authentic Tomato Salsa (Salsa Mexicana)

3 tomatoes 1 onion 2 garlic cloves ¼ cup cilantro leaves 1 tsp lime juice 1 jalapeno pepper 1 tsp oregano 1 tsp black pepper 2 tsp olive oil Salt
Choose fresh ripe tomatoes for this recipe. If you want to make green salsa, use tomatillos in the place of tomatoes. Chop the onion and cilantro leaves. Deseed the jalapeno pepper and slice them into halves. Mince the garlic cloves finely. If jalapenos are not available, use serrano chilies in the recipe. To blanch the tomatoes, place them in a large pot containing hot water followed by plunging them into cold water.
Peel the skin and chop the tomatoes coarsely. You can grill the tomatoes and chilies before grinding them to get a smoky flavoured salsa. To ensure authentic Mexican flavor, mortar and pestle are traditionally used to blend the salsa. However, you can use food processor or blender to grind the tomatoes. Place the tomatoes and jalapeno pepper in a blender and grind to get a smooth paste. Place a skillet or pan over a medium flame.
Add two teaspoons of olive oil to the pan. When the oil gets heated, add chopped onion and garlic to it. Saute the mixture for 1-2 minutes or until the onion turns light pink in colour. Add the tomato blend into the skillet and stir to mix. Add the chopped cilantro leaves and season the mixture with salt, pepper and oregano.
Reduce the flame to low, close and simmer for 10-15 minutes or until the salsa gets reduced to a thick mixture. Adjust the seasoning and add lime juice to the salsa. Remove from heat and serve hot with enchiladas, grilled fish or cooked meat. You can chill the salsa and serve it along with tacos and tortilla chips.

2 mangoes 3 tomatoes 1 small green pepper 1 red onion ¼ cup cilantro 2 tbsp lime juice 1 serrano chili/ jalapeno pepper
Peel, deseed and cut the mangoes into small cubes. Chop the onion, cilantro, green pepper and tomatoes finely. Deseed the serrano chili or jalapeno pepper and cut them into thin slices. In a medium-sized bowl, place all the ingredients together and dribble lime juice over it. Toss the bowl to mix the ingredients thoroughly.
Chill the salsa for at least half an hour before serving. Addition of mangoes brings a unique taste to this recipe. If mangoes are not available, use pineapples to make a spicy and sweet pineapple salsa. You can add fresh mint leaves to lend a refreshing taste to the regular mango salsa. Serve the salsa with nachos, tortilla chips or white fish. Mango salsa can also be served as a fresh salad.

1 avocado 2 tomatoes 1 red onion 2 tsp lime juice 2 tablespoon cilantro 1 jalapeno pepper Pepper and salt
You will need a fully ripe but firm avocado for this recipe. Cut the avocado into two equal halves, remove the stone and peel the skin. Chop the avocado coarsely. Blanch the tomatoes and remove the skin. Deseed the tomatoes and cut them into small cubes. Chop the onions and cilantro leaves. Deseed the jalapeno pepper and cut into thin slices. Place all the ingredients in the bowl and add lime juice. Season with salt and pepper and mash the ingredients with a fork.
Cover the bowl with a plastic wrap and chill the salsa for an hour. Serve the salsa with grilled fish, tortilla chips or tacos. You can add other fruits like orange and pineapple to make a healthy salsa salad.
