Vegetable oil – 2 tsp
Cavatappi macaroni – 350g
Butter – 5 tsp
Salt – as required
Pepper – ½ tsp
Milk -2 ½ cups
Plain flour – 5 tbsp
Cheddar cheese – 3 cups, grated
Cooked lobster meat – 2 1/2 cups
Take a pan of water and keep it for boiling, to this add the oil and enough salt to boil the pasta. Once the water has boiled add the pasta into the pan and allow it to cook, the cooking time may vary according to the variety, and check for the instructions behind the package. Once the pasta is cooked, only the way of knowing, if it is well-cooked is to taste it, ensure that the pasta does not stick on the palette and it is not starchy. Drain the water in the pasta and ensure all the excess water is removed.
Take a pan add the butter into it, once the butter has started melting, keep constant watch so that it does not burn. Add the plain flour in to the pan and stir it for two minutes, till the raw taste of the flour does not linger. To the pan add the some heated milk, and stir this vigorously and ensure that no lumps are formed.
The sauce should be stirred continuously, once the sauce starts to thicken and the right consistency is reached, take it off from the heat. Add the grated cheddar cheese, pepper powder and salt to the sauce; mix the ingredients until everything is integrated.
Assembling The Dish
Take a serving, oven proof dish, add the cooked macaroni, pre-cooked lobster into the dish and top it with the white sauce and the cheese mixture. Put it in the oven and bake it for 30 minutes, until the sauce is lightly brown. This is served best when it is warm, before serving add few shavings of cheese for the visual impact.
Preparing The Lobster Meat
You can buy canned lobster meat, but fresh lobster meat always tastes better. Put the whole of the lobster into a large pan filled with boiling water, add little salt and cook it for 6 to 7 minutes, the cooking time will vary according to the size of the lobster.
