Stuffed bell peppers are made in different cuisines around the world. Of course each cuisine has its own version of the stuffed bell pepper. Minced meat filled ones, to those filled with cottage cheese and lentils; there is no doubt that all of them are equally delicious. For vegetarians, a filling made of mashed lentils or crumbled cottage cheese, mixed with an assortment of spices and herbs works very well.
Meat lovers would definitely savor the taste of minced pork or beef stuffed bell peppers. Stuffed bell peppers works very well as appetizers in small get togethers or casual dinner parties. Here we present to you an easy and mouthwatering recipe for making stuffed bell peppers.
Stuffed Bell Pepper Recipe
Preparation Time: 10-15 minutes
Cooking Time: 30-40 minutes
6 medium-sized bell peppers
250 gms minced meat (lamb, pork or beef)
150 gms cheese grated
¼ cup chopped carrot
¼ cup chopped beans
¼ cup chopped peas
1 cup chopped onions
4 tablespoons oil
4 cloves garlic
1 inch piece ginger
1 teaspoon Garam masala
1 tablespoon soy sauce
Salt, to taste
Peel the ginger and slice it. Now grind the ginger slices and garlic cloves to get a ginger garlic paste. In a medium-sized pan add the oil. Once the oil is a little warm, add the ginger and garlic paste. Once the paste turns a little brown, add the chopped onions and cook them till they turn translucent. Now, add the beans, carrot, peas and minced meat. Cook till the vegetables are cooked properly and the meat is cooked through. Do not let the meat become too dry.
On the other hand make sure that you do not undercook the meat. Now, add the soy sauce and garam masala. Adjust the salt and cook well. Add the grated cheese and remove from heat. Let the mixture cool a little bit. In the meantime, prepare the capsicums or bell peppers.
To prepare the bell peppers, wash and dry the peppers and carefully cut off the top near the stem. You can use the green as well as red or yellow bell peppers. For this recipe, yellow peppers are the best, as they have a nice sweet flavour. Stuff the bell peppers with the meat and vegetable stuffing till the top. Make sure that you place adequate stuffing.
Place them in a baking tray and bake the stuffed bell peppers for 25-30 minutes at 225 degree Fahrenheit. Once the peppers are soft and cooked through, take them out of the oven and sprinkle some cheese on top. Bake them in the oven for a further 5 minutes or till the cheese has completely melted. Ideally, the top of the bell peppers should turn golden-brown and form a crust.
Serve the stuffed meat bell peppers when they are hot with steamed rice or baked potatoes. The meat inside the peppers has a soft a smoky flavor that goes very well with steamed rice. You can also microwave the bell peppers instead of baking them in the oven. If using a microwave, heat the bell peppers for 35-40 minutes.
