Paneer or cottage cheese is easily available in the market. You can prepare fresh paneer at home and you cannot beat the taste of fresh homemade paneer with a commercial preparation.

To make paneer at home boil the milk and add a few drops of lemon or vinegar to it. As soon as the milk starts to curdle, remove it from fire and pass it through a sieve. Wrap the paneer in muslin and place it under a weight for 1-2 hours to set. When the paneer is set, remove the cloth and cut it as required.

Ingredients

Paneer (cottage cheese) – 250 grams
Curd- 100 grams
Red Chili powder- ½ tea spoon
Turmeric- ¼ tea spoon
Salt to taste
Grated Ginger- ¼ cup
Orange Color- a few drops
Chaat masala to sprinkle on top

Method

1. Cut paneer in big chunks. Put it in a large bowl. Add curd, ginger, red chili powder, salt, turmeric, and orange color to the paneer pieces. Mix well, cover and keep it to marinate for 2-3 hours.

2. Heat a non stick girdle and grill the paneer evenly from all sides. Remove the paneer Tikka in a snack dish and sprinkle chaat masala on it. Serve hot with green chutney and hot garlic sauce.

3. You can grill the paneer in an oven on the grill mode or pierce them through a skewer and grill on rotisserie. Keep turning the pieces in between for even browning.

Tip

While serving Paneer Tikka pierce a tooth pick through each piece to make it easy to pick. If you want to serve Paneer Tikka as a dish then omit the grilling step and cook marinated paneer pieces in masala gravy. Garnish with fresh coriander and serve hot with rotis.
