Sushi is one of the most famous recipes from Japanese kitchen. It is very healthy, tasty and served beautifully. Most of the sushi dishes are non vegetarian and use lot of fish and seafood. But I am sharing this vegetarian version of Japanese sushi with you which is equally delicious. Sushi started hundreds of years ago for fish preservation which has now evolved as an art and exotic dish.The word sushi refers to rice. But now it is the name of a Japanese specialty dish. The vegetarian version of sushi can easily be made at home and does not take much time to prepare.
Things You Need
1 and 1/2 cups of freshly cooked short grain rice- boil it with 1 tablespoon of salt in 2 and a 1/2 cups of water
2 tablespoons of dry roasted sesame seeds
Vegetables For Filling
1 tablespoon of chopped carrot
1 tablespoon of chopped cucumber
1 tablespoon of chopped red bell pepper
1 tablespoon of chopped yellow bell pepper
1 tablespoon of chopped spring onion
1 tablespoon of chopped ginger
1/4 teaspoon of salt
4 tablespoons of rice vinegar
1 tablespoon of sugar
1 teaspoon of salt
1/2 teaspoon of wasabi or mustard paste
1/ teaspoon of red chili flakes
1/2 minced ginger
1/2 teaspoon of sugar and 1 tablespoon of vinegar mixed well
1/2 cup of chopped spring onions
1 tablespoon of vinegar
1 teaspoon of soya sauce
1 teaspoon of sesame oil
Instructions To Make Japanese Vegetarian Sushi
Mix vinegar, sugar and salt in a heavy bottomed saucepan and heat over low flame. Stir well until the sugar dissolves. Remove from heat and cool it down. Spread the cooked rice in a large dish and spatula to separate the grains. Add the vinegar mix and 1 tablespoon of dry roasted sesame seeds. Gently mix. Cover the rice with damp cloth. For the vegetable filling, mix all the vegetables in a mixing bowl and keep aside. Using wet fingers, place 1 tablespoon of rice in the palm and roughly shape into a ball. Make a small depression in the centre and place some filling in it.Wet your fingers and make a firm rice ball. Repeat this for rest of the rice and filling.
Sprinkle 1 tablespoon of dry roasted sesame seeds and cover with plastic wrap,ready to serve or the dipping sauce mix all the ingredients in a mixer and churn for 5 seconds. Pour it in a dipping bowl.Serve the sushi in a long serving plate with some spring onion sticks with the dipping sauce.
