Chocolate cheesecakes are a type of dessert which every chocolate lover relishes. It is very rich, creamy and fudgy and easily melts in mouth. Cheesecakes are generally made of three layers. The first layer is made with crushed chocolate wafers with melted butter.
The second layer is a combination of eggs, sugar, and cheese, sour cream which gives a thick, silky and smooth texture of a chocolate mousse. The third layer is a mixture of cream and chocolate which makes you feel that you are eating a chocolate truffle. Chocolate Cheesecakes can be a perfect finish for weekend steak dinner.

Preparing the Base
1 cup Chocolate wafer crumbs, crushed
½ Cup butter, melted
2 tablespoon Cocoa powder
150g Dark chocolate, chopped
2 and ½ cup cream cheese
¾ cup granulated white sugar
4 large eggs
4 egg yolks
1 teaspoon Vanilla Extract
1 teaspoon salt
1 tablespoon Custard Powder
150 ml sour cream
1/2 teaspoon cocoa powder, dissolved in 1 tablespoon hot water
Making the Chocolate Sauce
4 ounces of bittersweet chocolate, finely chopped
½ cup heavy cream
1 and ½ teaspoon golden corn syrup
Methods of Preparation Chocolate Cheesecake Recipe
At first, preheat oven to 350 degrees F. Take a 9 inch Springform pan. For the base, mix the chocolate wafer crumbs, cocoa powder, sugar and butter. Make a coarse crumb out of the wafers and then process the whole ingredients again to make damp and thick crumbs.
The crumbs are then pressed into the bottom of the 9 inch pan in an even layer. Leave it to refrigerate till the filling is prepared. Melt the chocolate in the microwave and leave it aside to cool.
Beat the cream cheese in order to soften, add sugar and custard power in the cream cheese and beat again to mix. Beat the eggs, egg yolks and sour cream and vanilla extract in a small bowl and then add the cocoa powder that has been dissolved in hot water and the melted chocolate to make a smooth batter.

Next take the springform pan out of the refrigerator and pour the filling. Settle the cheesecake pan in a larger baking pan and place it in the oven to bake.
Bake it for 45-50 minutes until it is firm and the center of the cheesecake looks wet and wobbly. Once baked, remove the pan from the microwave. Carefully loosen up the cheesecake, by running a spatula or a thin knife around the inside edge of the pan.
Leave the cheesecake to cool and cover it with a clingfilm. Allow it to refrigerate for few hours.

Preparing the Chocolate Sauce
Place the chopped chocolate in a bowl .Heat the cream and syrup in a small pan over medium heat. Bring to a boil. Pour the mixture of the cream immediately over the chocolate and keep it for few minutes until the chocolate is melted. Stir it thoroughly to whip it to a smooth sauce.
Pour it over the cheesecake and with the help of the spatula or a thin knife, spread the sauce evenly over the cheesecake. Cover the cheesecake and again place it in the refrigerator for hours or leave it overnight. Make small slices for serving.
Cheesecake tastes better when it is left to refrigerate for a day at least. Place the Cheesecake in a freezer bag after wrapping it with heavy aluminum foil. In this way it can be frozen and stored well for several months.
The best way to cut a cheesecake is by using a long knife dipped in hot water. Make sure to dip the knife in hot water every time you make slices.
