Mini sandwiches are tiny, delicious recipes which can be enjoyed as a snack or a meal at different times of the day. Usually they are made as finger foods by cutting the bread into smaller squares. If you want to make them look a bit more appealing, you can use cookie cutters to get sandwiches in varied shapes.

Egg Salad Sandwich
Preparation time: 15 minutes
Cooking time: 15 minutes
Serves: 4 (2 per serving)
Ingredients For Egg Salad Sandwich
4 slices brown bread
3 eggs
1 onion (chopped)
¼ cup sour cream
2 tsp cheese
1 tsp garlic powder
1 tsp thyme
1 tsp oregano

Method For Egg Salad Sandwich
Pour a cup of water in a sauce pan and place the eggs in it. Add a pinch of salt to the water. Cover the pan and allow the water to boil. Remove the pan from the stove and switch off the flame.
Do not remove the cover for 10-12 minutes. Now drain the water from the pan, transfer the eggs to a bowl containing cold water and leave it aside for a few minutes. Hard-boiled eggs are ready.

Chop the eggs finely and combine it with onion.Season the egg mixture with salt and pepper. Combine thyme, garlic powder, pepper, salt and oregano with sour cream. Add cheese to the mixture and whip until it forms a smooth paste. Refrigerate the paste for half an hour.
Meanwhile trim the edges of the bread. Cut them into four equal squares. To get even squares you have to refrigerate the bread slices for about an hour before slicing them.
Spread the paste on the surface of a bread slice and sprinkle some shredded egg on it. Spread the paste on another square and place it on top. Arrange them on a serving platter and complement the sandwich with a cup of tea.

Mango Chutney Sandwich
Preparation time: 15 minutes
Cooking time: 25 minutes
Serves: 2 (2 per serving)
Ingredients For Mango Chutney Sandwich
4 slices multigrain bread
½ cup mango chutney
¼ cup shredded cheese
2 tbsp oil/ butter
For Mango Chutney
4 mangoes (ripe)
¼ cup sugar
2 chopped green chilies
1 tsp asafetida
2 tsp chili powder
1 tsp oil
Salt

Wash the mangoes and peel off the skin. Cut them into small pieces and discard the seed. Heat oil in small pan and add mustard seeds. When the seeds splutter, add green chilies and asafetida. Stir in the mangoes and add 4 cups of water.

Add salt, pepper and stir the mixture. Cover and simmer for 15 minutes. Stir occasionally to prevent scorching. Add ¼ cup of sugar or more depending upon the sweetness of mangoes. Stir the mixture thoroughly and cook until the chutney becomes thick.
For Mini Sandwich
Use cookie cutters to cut the bread slices into shapes of your choice. Spread the mango chutney on a bread slice and spread some shredded cheese. Place another bread slice on top of it.
Place a frying pan on a medium flame and lay the sandwich on it. Dribble oil around the edges and wait till the edges turn brown. Flip it over and brown on the other side. Serve hot with French fries.
