Lemon Icebox Pie Pies are one of the other favorite desserts after icecreams. Pies are easy, simple and quick to prepare. When you fall short of ice creams or when they are not available on spot for a dinner party, pies are the second best option. Preparing a pie does not require special skills. There are many pies like apple pie, banana crust pie etc., which are too common.

However, lemon icebox pie is different from the usual and regular ones and tastes great. A creamy lime pie is the best way to end a dinner party. It is also considered to be a favourite among the kids. It is healthy too as this recipe is made of whole wheat crackers. Except for the heavy cream and sugar, lemon icebox pie is otherwise a low calorie recipe wherein variations like low fat cream and low calorie sugar are used.

Ingredients

For The Filling

2 cans of condensed milk
2 lemon zests
1  1/4 cup lemon juice
8 egg yolks

For The Crust

12-14 whole crackers
1/4 cup sugar
1/4 teaspoon salt
warm melted unsalted butter

For Cream Topping

2 cups heavy cream
1/2 teaspoon vanilla
1/4 cup sugar

Preparation Method

1. Break the crackers in to small pieces, add sugar and salt and mix well. Transfer the ingredients in to a food processor and pulse to 6 -8 times until the crackers are processed to granules. Take care not to make it in to a fine powder or large shards.

2. Pour the melted butter in to the processed crackers and pulse until it blends well leaving no crumbs. The mixture should hold together when pulsed for 12 times for 1 second each. Transfer the crust in to a pan and press the mixture at the bottom and sides of the pan equally. Set it evenly up to two- thirds of the tray. Let it set  aside for sometime. For the filling, whisk the condensed milk with lemon juice and set it aside. Now for the second mixture whisk the lemon zest from two lemons and the egg yolks for 1 minute. Blend the two whisked mixtures thourougly. Whisking is an important step and care should be taken so that the two mixtures blend well in to each other.

3. Pour the above mixture on to the crust (pressed crackers crust) which was set aside in the pan in the second step. Transfer this to the oven and bake until it settles soft and smooth for 25 minutes. Remove the crust from the oven and cool it for one hourand cover the pan with a plastic wrap and freeze overnight.

4. To make the cream, take a bowl and add 2 cups of heavy cream, vanilla and sugar. Whip on low speed to combine and then increase the speed to medium for about one and a half minutes.

Now release the pie that has been set, from the baking pan. Serve it as you wish by cutting it in to small pieces and layering it with small dollops of cream. Refrigerate the pie and allow it to cool for sometime. As the lemon icebox pie tastes great and best when served chilled.
