Diabetics should maintain a particular diet to retain their blood sugar levels but this does not mean that they cannot take pleasure of tasty recipes. Diabetics need meals which can be made in no time.
Here are some quick and healthy recipes.

Green Sprouts Chaat

Green Sprouts Chaat

Ingredients:

1 cup chick peas (roasted)
11/2 cup green gram (sprouted)
2 medium sized tomatoes (Finely chopped)
2 onions (Finely chopped)
2 green chilly (finely chopped)
2 tsp. coriander leaves (finely chopped)
2 tsp Lemon juice
1 tsp chaat masala
Salt to taste

Method:

Take 1 cup of green gram and soak in water for about 4-6 hours then drain the water and tie the soaked green grams in a cloth for overnight till they become sprouted (you can also buy sprouted green grams from the market). Boil these sprouts in ample of water till they become soft but they should not be too moist. Drain out the excess water and let the sprouts cool down. Add all the above ingredients and mix gently.

Soya Dosas

Ingredients:

¼ cup of Soya flour
¾ of Rice flour
¼ cup of split black lentils flour (Urad Dal)
1 tsp of Fruit salt
1tsp of Oil
Salt to taste

Method:

Take a large bowl and mix all the above ingredients by adding water to make a thin batter. Keep aside for 30 minutes. Now add 1 tsp of fruit salt to the batter and mix gently. Heat a non stick pan and smear little of oil. When hot, pour one quarter of the batter and spread it on the pan in a circular motion to make a thin dosa, pour a little oil along the edges and cook on one side. When crispy, fold and serve hot with any low calorie chutney.

Baked Tomatoes

Ingredients:

5 medium sized Tomato
1 medium sized Onion finely chopped
1tsp Parsley finely chopped
1 tsp Black pepper powder
½ tsp red chilli powder
½ tsp Coriander powder
Sauces for taste
Salt to taste
½ tsp Sage or chives

Method:

Wash the tomatoes and cut into two pieces and set them in the baking dish with a little water at the base. Add the spices and sauces along with parsley, salt, onions and sage or chives Now bake the tomatoes for 20 minutes at moderate temperature and your luscious dish is ready.

Ragi (Nachani) Upma

Ingredients:

2 tsp of Ragi (Nachani) flour
2 tsp of Suji (Rava)
1 tsp of Urad dal
¼ tsp of mustard seeds (Rai)
¼ of Chana dal
1 medium sized Onion (finely chopped)
1 finely chopped Green chilly
Few Curry leaves
1 tsp Coriander finely chopped for garnishing
4 tsp of Oil
Salt to taste

Method:

Roast Ragi (Nachani) flour and Suji (Rava)  in a dry pan and keep it aside. Heat oil in a pan, splutter mustard seeds and fry the chana and urad dal till it turns brown. Now add green chili, curry leaves, onion and fry till brown. Add Ragi and Rava to the mixture and mix well. Add salt and water and cook it on low flame till cooked. Garnish with coriander leaves and serve hot.
