It can be accompanied by raisin sauce, whipped cream or a couple of scoops of vanilla ice cream. It is a double crust pie which uses flour pastry on both top and bottom. Here is a simple, delicious and fool proof recipe for making apple pie.
For The Crust (The Recipe Makes One Double Crust)
For the crust you will need the following ingredients :
200 gms white refined flour
150 gms plain, unsalted white butter,
6 tbsp of sugar (you can vary this as per taste)
8 tbsp of ice cold water.
A pinch of salt.
A 7 inch pie dish with a detachable bottom
Melt the butter. Combine the butter, salt and the flour and mix it well till it starts resembling bread crumbs. Now gradually add sugar to this mixture and continue to mix.
Add the water, little at a time and knead this mixture into a soft dough. You may add more water if necessary. The dough should be soft but not sticky. The trick is to knead the dough well. Once the dough is ready, divide it into two portions. Wrap with cling film and refrigerate for 20-25 minutes.
After 20 minutes, remove this dough. Take one portion and roll it out with the help of a rolling pin. Line this dough to the bottom of the detachable pie dish and slough off the extra edges. Cut fine slits into the dough to prevent the flour from rising.
In a pre-heated oven, bake the bottom crust for 30 minutes at 170 degrees Celsius. Once it turns golden brown, take it out from the oven.
The bottom crust is now ready. Put this back in the refrigeratorand allow it to cool.
For The Filling
For the filling you will need the following ingredients :
1kg apples, peeled, cut and sliced ( You may use top quality Washington Apples for added flavor and texture)
1teaspoon cinnamon powder
½ teaspoon nutmeg powder
1 cup sugar
2 tablespoons plain, unsalted white butter
In a saucepan melt the butter and to this add the cut apples. Add the cinnamon powder and nutmeg powder and mix well. Cover the saucepan and allow the apples to cook till they start sweating considerably.
Now add the sugar and mix well. Let the apples cook on slow heat till they become soft, pulpy and homogenous. Once the apples are cooked they will take on a golden brown hue. Now remove the baked pastry crust from the refrigerator and put this apple filling. Fill to the brim.
Roll out the second half of the dough and cover the pie dish to form the top crust. Slough off the edges. You may decorate the top crust by pinching the sides of the dough. Again make slits into the dough to allow the oven heat to penetrate.
Now bake this pie in a pre heated oven for 25 minutes at 170 degrees Celsius. Remove and serve hot with whipped cream or vanilla ice cream.
