Vegetable Soup Soup is basically a hodgepodge of vegetables cooked in water. It is most popular throughout the world and each country has its own version of soups. There are no rules when it comes to making of a soup. Indian vegetable soup is the most simple and easy recipe to make.

Vegetable soup is full of different variety of vegetables which makes it healthier and full of highly beneficial nutrients. Although you can make different kinds of soup, every soup has its own qualities and nutrition value. Vegetable soup is not only nutritious but also very yummy and delicious in taste. You can make lot of variations according to the seasons and your requirement. Today I am going to show you the simpler and quicker method of making the most delicious and awesome Vegetable soup.

Preparation Time: 25 minutes

Ingredients

1/2 cup of carrots (finely chopped)
1/4 cup of cauliflower (finely chopped)
¼ cup of cabbage shredded
1/4 cup french beans (finely chopped)
1/2 cup green peas shelled
11/2 cup tomatoes (finely chopped)
4-5 garlic cloves
1 inch ginger piece
2 tsp coriander leaves chopped
3-4 tsp butter
2 glasses of water
Black pepper powder
1 tablespoon soya sauce
Salt to taste
1-2 green chilles (optional)

For Garnishing

Fresh coriander leaves finely chopped
½ tablespoon of fresh cream
1 cup fried bread pieces

Procedure to Make a Vegetable Soup

Firstly take carrots, cauliflower, cabbage, tomatoes, french beans and wash them thoroughly. Now take a large vessel and put these chopped carrots and french beans, cabbage, cauliflower, tomatoes, green peas, piece of ginger, garlic cloves and also add sufficient water.

Now cook these vegetables for about 15-20 minutes or until they soften. Drain these vegetables and Let them cool down. do not throw away the drained water. Now blend these cooked vegetables, tomatoes, ginger and garlic in a blender to make a smooth paste.

Take a saucepan add butter to it, once the butter starts melting add the vegetable paste, add the vegetable stalk as required. Mix the corn flour in half cup water and add it to the soup. Keep stirring constantly while boiling the soup. Add soya sauce, pepper powder and salt. Boil till the solution becomes thick and transparent. Add more vegetable stalk, if required to adjust the consistency of the soup. Now that your tasty and healthy soup is ready transfer it to a soup bowl. Garnish with fresh coriander leaves, fresh cream, and fried bread pieces and Serve hot.

Tips

1. Do not strain the boiled vegetables instead make a smooth paste to avoid wasting vegetable paste.
2. You can use any vegetables of your choice to make this soup.
3. You can garnish with grated processed cheese to make appealing for kids.
4. You can add green chilles if you want your soup to be spicier.
5. You can even fry onions and add to the soup or garnish with fried onion rings
6. You can add some sugar or tomato ketchup if you want a sweet and sour taste to your soup.
