Begin by cleaning the chicken. Make sure that there are no giblets. Put all the spices in a little bowl and mix them. Rub the mixture of spices onto the skin of the chicken, sprinkle salt and pepper and drizzle some oil. Make sure that the spice mix has covered every nook and corner of the chicken. Coat it well and evenly. There should be no spice lumps formed on the chicken.
Put the chicken into the refrigerator and leave it overnight. This process is going to prepare the chicken for the crock pot. All the spices mixed together will add their flavor to the chicken through the marination overnight.
When you are ready to cook take out the chicken and thaw. Heat oil in the crock pot and add the chopped onions. Shallow fry the onions till they turn translucent. Add the garlic at this point and saute again. Now add the mushrooms and stir well for 5-7 minutes. When you get the rich aroma of the onion and garlic add the whole chicken into it. Saute the chicken till the skin of the chicken looses its pink color. Top the chicken with the Swiss cheese and let it cook on a low flame for 4-5 hours. Once you are done, you will see that the chicken becomes so tender and moist that it simply fall off the bones.
