Indian Samosas are very spicy and extremely popular snack throughout the country. Usually we prepare or offer this lovely looking snacks to our guest whenever there is any family get together or small parties at home. I’m here, to share with you my recipe of Healthy Vegetable Samosas.
These samosas can be made with different vegetables inside, if you have capsicum, beans, spring onion or some other vegetable in the refrigerator, they can just be added to the mix. Also these samosas can be made more hot and spicy as desired.
Vegetable Filling Ingredients:
1 boiled Potato
1 cup cauliflower florets blanched
1/4 cup finely chopped carrots
3/4 cup boiled green peas
2 finely chopped onions
2 chopped green chilles
2 tsp finely chopped coriander leaves
1/2 tsp cumin seeds
1/2 tsp garam masala
1/2 tsp red chilli powder
1 tsp of coriander powder
1/4 tsp turmeric powder
Few curry leaves
Salt to taste
Take a big pan and heat the oil, add cumin seeds and curry leaves to it once they start spluttering add finely chopped onion and sauté till it changes color. Now add turmeric powder, red chilli powder, coriander powder and green chili and fry for a minute. Add the vegetables and stir well. Finally add chopped coriander leaves (cilantro) and garam masala.
2 cup all purpose flour (maida)
½ cup semolina (rava)
1 tsp carom seeds (ajwain)
2 tsp ghee
Salt to taste
Oil for deep frying
Mix the salt, semolina and all-purpose flour together. Heat ghee and add to the flour and rub in. Add water and ajwain and make stiff dough. Take a small portion and roll out like a thick poorie. Cut this disk into 2 semi circles. Place the filling on each semi circle and shape into a cone; seal all the edges well with water. Deep fry samosas over medium heat till crisp. Serve hot with any chutney or tomato ketchup. You can also try these samosas with hot tea/coffee.
Apart from Vegetable Samosas, Samosas can be prepared with different variations. You can make Paneer Samosas, Onion Samosas, Aloo Samosas, Soya Samosas, Chinese Samosas and many more.
These samosas are filled with mashed boiled potatoes, green peas and small cubes of paneer.
These samosas are filled with poha (beaten rice) and finely chopped onions.
These samosas are very common and are loaded with boiled and mashed potatoes.
These samosas are filled with onion, soya mini chunks/granules and paneer cubes.
These samosas are filled with a mixture of mashed boiled potatoes roasted peanuts and schzwaan sauce.
1) Filling should be dry enough to make the stuffing.
2) You can add any spices for filling as per your taste.
3) You can seal the edges of samosas with the help of fork to give a unique look.
4) Ensure that the samosas are deep fried in medium heat.
5) Samosas are loaded with calories so when you take them out from oil, put them on a tissue paper first beforing serving so that extra oil can be removed.
