Required Ingredients
Cherry tomatoes (red and yellow)- 2 cups, cut into halves
Italian tomatoes- 6 small or 4 large, cut into slices
Lettuce leaf- 1 large, torn it to make smaller pieces
Fresh basil leaves- 16 nos.
Pumpkin seeds- 2 tablespoons, toasted
Sunflower seeds- 2 tablespoons, toasted
To Make Garlic Vinaigrette
Garlic- 1 small clove, chopped finely
Red wine vinegar- 1 ½ teaspoons
Extra virgin olive oil- 2 tablespoons
Pepper- to taste
Method
Whisk vinegar, garlic pepper and oil to prepare the garlic vinaigrette in a mixing bowl. Keep aside.
Arrange the lettuce leaves as a layer on 4 small plates or on a serving plate.
Add sliced Italian tomatoes first and then put cherry tomatoes on top.
Drizzle the vinaigrette on the salad.
Scatter the sunflower seeds, pumpkin seeds and basil leaves on the salad.
Serve immediately.

Method
Steam sugar snap peas for 3 minutes or until tender. Ensure that they are crisp. Run them under cold water and thereafter cool the peas.
Mix cherry tomatoes, peas and green onions together.
