1 teaspoon of salt
1/3rd teaspoon of turmeric powder
2 large cloves of garlic, finely chopped
1 tablespoon of vegetable oil
1/3rd teaspoon of black mustard seeds

Method of Cooking For Chana Daal Recipe

1. Fill a large bowl half way up with water. The water should be at room temperature and is meant solely for the purpose of washing the chana daal. Then take the chana daal and dump it into the water. Let the daal sit in the water for ½ hour. Then pick up the bowl in your hands and clean the daal by gently rubbing and massaging it with your hands.

2. You will notice that the water is turning murky. Once that happens, drain away the water and fill the bowl with some more fresh water. Clean the daal by discarding the water 3-4 times or until the water remains clear even after cleaning the daal in it.

3. Now set a pot on medium high flame and fill it up with 7 cups of water. Add the stated amounts of salt to the water and bring it to boil. In the meantime, drain away the water and retain the chana daal in the bowl.

5. Open the lid halfway on the cooking process and give a brief stir to the chana daal and cook it for the remaining time. Pick up one chana daal and press it gently with your hands. If the daal gets smashed easily, that means that the daal is completely cooked.

6. Then discard some of the water from the pot and retain about 3 cups of water. After that, add the cumin powder, garam masala powder, turmeric powder, cayenne pepper powder, and coriander powder to the daal. Stir the chana daal in circular motions to mix the spices nicely with the daal.

7. After that, set the flame on low and let the daal simmer until you get a thick mixture. While that happens, take a mini pan or skillet and put the vegetable oil in it. Set the skillet on low heat and heat the oil until it starts crackling.

8. Once that happens, add the chopped garlics and the black mustard seeds to the oil. Fry them for a few seconds until fragrant. Once you get the desired consistency of the daal, add the oil mixture to the daal. Finally, add the ghee and serve with hot roti.
