For making this salad, you will need 3 different colored bell peppers, since those are the high-light of the recipe. Along with this, you will also need a big bowl of sweet gold corn kernels, about 1/2 cup of goats cheese, some chopped onions, chillies, lime juice and red wine vinegar to bind together the entire dressing.
Making Roasted Pepper
For making the roasted pepper, you just need to slice all of the bell peppers into long strips. Then drizzle with some salt and olive oil and then roast it in the oven over low heat. Doing so brings out the sweetness of the peppers and also gives a nice burnt flavor to it.
You can now roast the corn in a pan. Doing so helps to give the corn a little-burnt taste, which really goes well with the roasted pepper. You can also roast the onions here and add other vegetables at this stage. If you want to avoid cooking it then use the ingredients raw. At this stage, also add or avoid the chillies.
Preparing The Dressing
