Short crust pastry forms the basis for almost all kinds of pies, pastries in different form and shape is devoured and liked by everyone across the world. Quiche can be eaten both cold and hot, but nothing can beat a warm cheesy, succulent quiche.
This is my favourite recipe for ham and cheese quiche, the best thing about quiche is that if you have guests at home, there is no need to sweat out in the kitchen on the day of their arrival. Make the quiche well in advance and freeze it in a air tight container .Bake them in an oven before you serve it, you would be deemed as a fabulous cook.

For The Pastry
Plain flour – 225g, little extra used for rolling
Baking margarine – 115g, cold, cut into small pieces
Egg yolk – 1
Water – 2 tbsp
Salt – a pinch
Heat the oven to 180 degree Celsius. Sieve the plain flour and a pinch of salt together and rub the margarine and ensure that it is in the form of fine breadcrumbs. Add the egg yolk to the mixture and add little water at a time and make it into dough and make sure the consistency is right.
Roll out the pastry and place this on a baking tray for the quiche and ensure that it is lined well along the edges. Prick the base with a fork and keep it in the fridge to cool for around 15 minutes. After it is cooled, place the pastry in the oven for baking for 10 minutes; once it is lightly brown take it out of the oven.
For The Filling
Ham – 250g, cut into small cubes
Olive oil – 2 tsp
Spring onions – 4, sliced into small pieces
Parmesan cheese -75g
Milk – 100 ml
Basil leaves – 1 tbsp, finely chopped
Heat the olive oil, in a frying pan, add the ham and fry this for a few minutes, until it starts to cook. Once it is cooked, add the spring onions and let this sauté for a few minutes till they are soft, one it is done take it off the fire. Take a mixing bowl and add the eggs and the milk and mix it together well, till it is all incorporated.
Into the baking tin over the pastry, scatter the onion and the ham mixture, on top of it pour the egg and milk mixture. Scatter the parmesan cheese liberally, over the mixture and sprinkle the basil leaves over the quiche. Let the quiche bake in the oven for 30 minutes, until it is set and golden brown. Quiche is best served hot.
Note: You can alternate the main ingredients of the quiche with products of your preference, ham can be alternated with chicken, and you can add any vegetable of your choice, also for varied flavour, such as mushroom and peas.
