The Thai chicken salad is extremely delicious with the combination of sweet and sour flavors. It is made with salad leaves and chicken fillets along with the dressing of coconut cream, lime juice and fish sauce. Some people add deep fried wonton strips, toasted rice and rice stick noodles to add flavor to the dish. This dish is very easy to make and tastes wonderful as well. Here is a simple, fast and fabulous Thai chicken salad recipe that you will surely love.
How To Make Thai Chicken Salad

Servings: 5 people
For The Chicken Salad
Six chicken fillets or chicken breasts
One cup of mixed greens
One cup of salad leaves or shredded Napa cabbage
One bell pepper cut into juliennes
Six cherry tomatoes cut into halves
One thinly sliced onion
One cup of grated carrots
One finely chopped lemon grass
One cup of roasted salted peanuts
One finely chopped red chili or some chili flakes
Half a cup of freshly chopped mint leaves and basil leaves
For The Salad Dressing
Two cups of coconut cream
One cup of lime juice
Two teaspoons of vinegar
Two tablespoons of Thai fish sauce
Two tablespoons of brown sugar
Half a teaspoon nutmeg powder
Half a teaspoon of Chili sauce or any hot sauce (optional)
Method Of Preparation
1. Grill the chicken fillets or cook them in an oven. Once the chicken is cooked, cut them into thin strips. Mix it with the mixed greens, onions, tomatoes, carrots and bell peppers in a large bowl. Add lemon grass, chili flake, mint and basil leaves. Mix all the ingredients well using a wooden spoon.
2. Prepare the dressing for the salad by adding coconut cream, vinegar, fish sauce, brown sugar and nutmeg powder in a small pan. Heat the pan and allow the ingredients to simmer for around ten minutes. Remove the pan from the heat and add lime juice. Boil for two to three minutes more, remove from heat and allow it to cool. Once the salad dressing has cooled sufficiently, add it to the salad and mix all the ingredients well
3. On a plate place some salads leaves and then add the chicken salad on top. Garnish with toasted peanuts and basil leaves. There are many variations of this simple salad recipe. Some people prefer using fried wonton strips. Just get some wonton skins from the market, cut them into thin strips and add deep fry them in a skillet.
4. Add this to the salad for some extra crunch. You can also cook some rice stick noodles by boiling them in hot water. Once the noodles are cooked drain out the water and cut the noodles into smaller pieces. Place it over the chicken salad before garnishing with peanuts.
