Spiced Chicken Skewers

Heart healthy appetizers can be had by patients suffering from cardio-vascular diseases or those who have had a history of cardiac disease. These are nutritious, rich in protein and fiber and significantly reduce cholesterol.

For the avid weight watchers, these can be incorporated without extra fat and calories. The recipes consist of non vegetarian snacks for the chicken lover who does not wish to compromise on his culinary tastes and love for non-veg fare.

It is a chilli-rubbed chicken cooked on the grill. It comes with porridge or ‘daliya’ as an accompaniment.

For The Ingredients You Will Need

1 cup daliya
600 gms, boneless, skinless chicken breasts that are cut into 1 inch chunks
1 ½ tsps of red chilli powder
2 teaspoons of extra virgin olive oil
3 small cups of cherry tomatoes
2 lemons
2-3 cloves garlic, crushed
1 cup fresh parsley leaves, chopped

Method

Prepare an outdoor grill for grilling or heat up a large grill pan on medium heat. In a large microwave safe bowl put in the daliya with one and  a half  cups of water and microwave this mixture on high heat for about ten minutes. The daliya by now will be cooked. Stir the daliya well.

In a medium sized bowl combine the chicken with red chilli powder, ¼ teaspoon of salt,1 teaspoon of olive oil and freshly ground black pepper. Mix this till the chicken is completely coated. Now place the chicken pieces on the skewers along with the small cherry tomatoes alternating them. They should be ¼ inches apart.

Place the chicken skewers on the hot grill grate and allow them to cook for 7-8 minutes occasionally turning them over.

In another bowl grate the rind of one lemon. To this add the juice from the two lemons. Mix the daliya crushed garlic, parsley leaves and ground pepper powder. Douse this with the remaining olive oil. Divide the daliya mixture equally on the serving plates along with the skewers.

Now serve this with the lemon cut into wedges.

Chicken Tikka With Potatoes and Peas

This is a fabulous combination of the freshness of summer vegetables and heart healthy chicken.

For The Ingredients You Will Need

600 gms of potatoes that have been halved
150 gms fresh peas
5 spring onions trimmed and sliced
2 tablespoons of tikka paste or curry paste
4 tablespoons natural yoghurt
6 chicken thigh fillets or 4 chicken breasts cut into finger size strips or chunks.
4-5 pea pods

Method

Cook the potatoes in boiling water until they are absolutely tender. Add the peas and let them cook for 3-4 minutes. Now add in the sliced spring onions. Drain the vegetables and tip them into a large serving bowl.

Set the grill on high. Combine the tikka paste, yoghurt and the chicken pieces. Add salt for seasoning and mix well. Once they are well coated, tip them onto the grilling tray and grill them for about 10 minutes flipping them over half way through cooking.

Once done, add the chicken to the drained vegetables and mix well. Garnish with the pea pods on the top. You can serve this as an appetizer just before the main course. This recipe gives just 267 calories from each serving and serves four people. You can also choose to marinate the chicken for ten minutes prior to cooking or marinate it over night in the refrigerator.
