To be very precise, an enchilada is a Mexican rolled tortilla puffed with fillings like vegetables, cheese, meat, and seafood; topped with onions, lettuce, chili peppers; and wrapped with a piquant sauce.
In many South American countries like Honduras, Costa Rica, and Guatemala, the dish is quite popular and cooked in different ways. A cup of black beans
A cup of pinto beans
4-5 garlic cloves
A tsp cumin powder
Salt to taste
10-12 flour or corn tortillas
A tsp red chili powder

A can of enchilada sauce
2 cups water
A tsp cider vinegar

How to Make Bean Enchiladas Recipe?
The tortillas needs to be baked in an oven; preheat oven to about 350 degree Fahrenheit.
Frying: Heat a non-stick pan over gas flame. Let some cooking oil get warmed in it. Peel off the skin of onions and garlic. Mince them into pieces and add to the oil for sizzling. Wait until onions become somewhat tender.
Add tomatoes, oregano, cumin powder, chili powder, soy crumbles one by one. Stir well all the contents.
Properly rinse both types of beans. Chop them nicely before adding them to the pan contents. Smash these with a masher so that are blended well with the other ingredients. Wait for the mixture to get cooked for 3-4 minutes.
Now, mix in shredded cottage and cheddar cheese and stir well the mixture. Blend the mixture with salt, water and vinegar. As the mixture turns thick, add salsa sauce. Cook for 2 minutes before shutting off the gas.
It is tortillas’ turn now… Remove them from the package and warm as per directions. These are going to get baked now… Smear the surface of a baking dish with a cooking spray. Make sure that the dish is big enough to accommodate all the tortillas. A 13” by 9” will do the job.
Pour some enchilada sauce over the dish. Over each of the tortilla, place the beans mixture prepared in above steps. Concentrate the mixture over tortillas’ center so that they can be rolled easily. Roll each of the tortillas, keeping them open from top and bottom. Place them over baking dish in such a manner that their seam-sides face the dish surface.
Liberally pour the enchilada sauce over each of the tortilla. Sprinkle them with grated cheese and bake them in oven for 20 minutes.
As they get baked, garnish them with chopped coriander leaves, green onions, and avocados, sour cream, tomatoes etc.
