Along with this, you will need 1 cup of chicken stock or broth, some green onions, 3/4 cup of sour cream, salt and pepper to taste and 2 spoons of lemon juice. You can also use toasted bread and chives or anchovies for added taste and garnishing.

Make sure that the cucumber is peeled finely and then chopped into 2 inch cubes. The avocado should be peeled and the puree should be taken out using a spoon.

The next step is to use a food processor and then blend both the avocados and cucumbers along with the green onions. Remember that the green onion leaves should be kept for slicing and decoration and the white part should be used. Pulse to make sure that it is all chopped and smooth.
