Brisket is considered to be the national dish of Republic of Texas and cooking up an entire brisket is a wonderful excuse for throwing a party. Barbecue beef briskets are actually a gigantic clod of a cow which doesn’t really look much appetizing as it is almost black on the top.
But if it is cooked in the right manner, you will love to savor this juicy, tender, and flavorful piece of meat. If not cooked properly, it becomes hard and chewy like leather and becoming almost inedible. Therefore, it must be prepared and cooked well.
Preparation Time: 10 minutes
Cooking Time: 4 hours
Chili powder: 2 tablespoons
Salt: 2 tablespoons
Garlic Powder: 1 tablespoon
Onion Powder: 1 tablespoon
Onion Powder: 1 tablespoon
Ground black pepper: 1 tablespoon
Sugar: 1 tablespoon
Dry mustard: 1 2 teaspoons
Bay Leaf (Crushed): 1
Beef brisket (trimmed): 4 pounds
Beef stock: 1½ cups
1. Preheat your oven to a temperature of 350 degrees Fahrenheit.
2. Make a mixture by combining all the dry ingredients such as salt, chili powder, onion powder, garlic powder, sugar, black pepper, bay leaf and dry mustard. Now slowly rub this dry mixture on the raw brisket; make sure to rub both sides well. After this, roast the brisket by placing it over a roasting pan uncovered for at least an hour.
3. After the brisket has roasted for about an hour, pour beef stock all over it along with enough water to get about half an inch of liquid inside the roasting pan. Turn down the oven to a temperature of 300 degrees Fahrenheit, cover the roasting pan with a tight lid and then cook in the oven for about three hours, or till it is tender enough that you can easily pan a fork through it.
4. Trim off the fat from all sides of the brisket and then slice the meat in thin slices across the grain. Before serving, top the slice with juice left over in the pan.
Beef Briskets works great when served with a side dish of potatoes. Alternatively, you can use thick slices of bread and stuff gravy soaked pieces of brisket between two slices. You can also garnish your beef brisket with caramelized onions, red bell peppers, and grilled anchovies.
Prepping the Brisket
Before cooking the beef brisket, here are some step you can follow to prepare the meat well for cooking.
Rinse the meat extremely well and dry it off with the help of paper towels. After this, trim as much fat as you can but leave ¼ inch of it on the meat.
Though not mandatory, but pumping beef broth into the briskets can make it more moist and succulent. This can be done by inserting a needle parallel to grain in different locations and inject 1/8 cup of beef broth for every pound of meat.
Before rubbing the dry mixture on the beef brisket, coat it lightly using oil and then rub the mixture all over it. This is helpful as many of the ingredients are oil soluble and can be absorbed into the meat in a better manner. Many people coat the meat using mustard but it is not capable of absorbing all the flavors like oil.
