Easy Steps On How To Make Rajmah Masala At Home A great turn on for North Indians, rajmah or kidney beans, is a dish for almost every special occasion; relished mostly with rice, this Punjabi cuisine is easy to prepare at home.

It does not require any special preparation on your part; neither it requires any complicated or time consuming procedures. Rajmah masala is available in market, but you can prepare it at home itself. Know about the method of preparing the dish by following some simple steps as explained below:

Ingredients Needed

A cup of rajmah
Salt to taste
2 big sized onions
A tablespoon of tomato puree
½ tablespoon of coriander seeds
A tablespoon each of ginger and garlic paste
¼ cumin powder
Pinch of amchoor (dried mango powder)
Fenugreek leaves
¼ garam masala
Red chilli to taste
½ tablespoon of turmeric
A big spoon of oil

Preparation

As the skin of kidney beans is quite hard, you need to keep the soaked overnight. You can also keep them soaked for 4-5 hours just before cooking.

Boiling Rajmah

Put the soaked kidney beans in a pressure cooker and add water so that the beans are completely immersed in it. Add some salt and turmeric powder to it. You can also add some green chillies to this. Allow rajmah to cook on high flame first; after a whistle, sim the flame. Cook for another 30-35 minutes. After they are cooked, keep them aside. There is no need to drain water from them as it will be used later.

Preparing  Masala

Heat some oil in a non-stick frying pan. When it becomes a little warm, add cumin and coriander seeds to it. As they start crackling, add 2 finely chopped onions. Stir the mixture slowly. Wait until the onions turn golden brown. Sim the flame and add ginger-garlic paste; you can also add finely crushed ones. Mix well; cook until the mixture turn brownish.

Now add tomato puree or finely cut tomatoes. Keep on stirring well. If you add chopped teammates , you will have to wait a little longer till all the ingredients become uniformly mixed. Add salt to taste and some turmeric also. Saute till tomato puree acquires deep red color.

Take amchoor, garam masala, and red chilli powder; to them add some water so that it becomes a paste. Add this paste to the contents of the frying pan and allow them to cook for a few more minutes.

Mix Rajmah with Masala

Now is the time to add boiled rajmah to the cooked masala mixture. With the help of a ladle, put some rajmah into the mix. Stir well and then add the remaining kidney beans also. You can increase the gas flame now. Add water to make the puree. Keep on stirring. Wait for a boil and again lower the flame. Meanwhile add some freshly cut coriander leaves. Simmer the mixture for another half an hour. Keep on stirring. After you have put the gas to sim, you can cover the pan with a lid in order to hasten the cooking.

After you are done, place them in a bowl and serve with rice or chapatti.
