For making this potato salad, you will need about 2 pounds of small potatoes. some fresh garlic, 3 spoons of butter, salt and pepper to taste, some lettuce leaves, 1/2 cup greek or plain yogurt, 1/4 cup extra virgin olive oil, 2-3 spoons of red wine vinegar, 2 spoons of lemon juice and some assorted vegetables like spinach leaves, red bell peppers, olives, feta cheese, red onions, etc. And finally 1/2 cup of feta cheese to finish off the salad.

The first thing that you have to do here is prepare the potato. For doing this you must wash the potatoes in some hot water and then para boil them. Once this is done, they are ready to get into the oven. Line an oven tray with some foil. There is no need to peel potato skin here to retain nutrition. Then toss the potatoes in some olive oil and put it to bake at high heat for about 30 minutes or till crispy brown.

Preparing The Dressing

For making the vinaigrette dressing, you need to mix together 4-5 spoons of red wine vinegar, along with few spoons of extra virgin olive oil, some salt, pepper, garlic and of course the lime juice. Shake all the ingredients well to prepare them.

Chop the red onions and take out the pits from the olives. You also need to tear the lettuce leaves along with the baby spinach. Once this is done, get your red bell peppers chopped too and assemble in a salad bowl.

The first thing that you have to do is take the potatoes out of the oven and make sure that they are crispy, now mix it together with yogurt. In the hot stage, it absorbs the yoghurt well. Then mix the vinaigrette dressing with the vegetables. In a big tray or wooden bowl, first lay down your veggies, then put the potatoes on top and finally sprinkle the feta cheese.
