For The Cake
Eggs – 4
Eggnog – ½ cup
Vanilla extract – 2 teaspoons
Cake flour – 1¾ cups
Sugar – 1½ cups
Baking powder – 2 teaspoons
Salt – ¾ teaspoon
Nutmeg – ½ teaspoon
Unsalted butter, cut into cubes, at room temperature – 1 cup
For The Frosting
Egg whites – 5
Sugar – 1 cup
Nutmeg – 1/8 teaspoon
Salt – a pinch
Unsalted butter, diced, at room temperature – 2 cups
Eggnog – 1 teaspoon
Vanilla extract – 1 teaspoon
Method Of Preparation Eggnog Cake Recipe
The first step is to prepare the cake for which you need to first preheat your oven to a temperature of 350 degrees Fahrenheit. Next, spray the cake mould with oil or cooking spray and line it using parchment paper.
Take a medium sized bowl and add the eggnog, eggs and vanilla essence to it. Whisk them together properly and keep aside.
Take another large sized bowl and combine together sugar, flour, salt, nutmeg and baking powder. If using a standing mixer, set it on medium low and add one piece of butter at a time and combine till the mixture starts to come together and appears sandy.

After this, add half of the eggnog mixture and combine well. Increase speed of the mixer to medium high and beat till it becomes light and fluffy. Mix in rest of the ingredients and continue mixing till everything is combined well.
Divide the batter into two equal parts and pour them in the two prepared baking pans. Place on the center rack and bake in the oven for about 20 minutes or till a toothpick inserted in the cake comes out clean.
Once the baking is complete, remove the pans from the oven and let them stand for few minutes. Move a pairing knife around the cake’s edges and overturn it on a wire rack and let it cool down to room temperature before frosting and assembling.
To prepare the frosting for the eggnog cake, place a medium sized bowl over a pan of simmering water and mix together sugar, egg whites, salt and nutmeg. Heat up this mixture while whisking continuously, till the sugar dissolves completely and the mixture reaches a temperature of 160 degrees.
Pour into another larger bowl and whisk on medium high speed till stiff peaks are formed. This should take around 10 minutes.
Set the speed on medium and add 1 piece of butter at a time and beat till all of it is well incorporated. Continue beating till the frosting becomes smooth and thick. In case it looks soupy or curdled, continue beating for few more minutes till it becomes smooth again.
Finally add the eggnog and vanilla and mix till well incorporated. Frost your eggnog cake with the eggnog frosting and your delicious holiday treat is ready to serve.
