Chicken tomato soup is one of the easiest soup recipes that can be made at home any time using very few ingredients. The tangy flavour of tomatoes and the fresh aroma of black pepper make this soup absolutely mouth-watering. You can enjoy this soup with grilled sandwiches or garlic bread.
Chicken- 500 grams
Tomato- 500 grams
Whole black pepper- 6-7
Sugar- ½ teaspoon
Bay leaf- 2
Butter- As required
Black pepper powder- As per taste
Salt- As per taste
Method Of Preparation:
Step 1 :
Cut the chicken into few big pieces. Place a pan on the flame and add sufficient water to boil the chicken. Wash the chicken pieces thoroughly first and keep them aside. Now take one onion and cut it in four equal parts. When the water comes to a gentle boil, add the chicken and onion pieces along with the bay leaves, whole black pepper and little salt. Cook until the chicken becomes soft and tender. If you have less time, you can also cook the chicken in pressure cooker for about 15 minutes.
Step 2 :
After the chicken gets properly cooked, remove the pan from the flame and let it cool down a bit. First separate the chicken stock and keep it aside. Now cut the chicken into small pieces while removing the bones. You will get about 2 cups of small boneless chicken pieces.
Step 3 :
Strain the chicken stock through a sieve to remove the black peppers and bay leaves. Meanwhile put the tomatoes in a pot of hot boiling water. After the tomatoes get boiled, place them in a separate dish. Do not throw away the water in which the tomatoes have been boiled. Mix the chicken stock and tomato stock together.
Step 4 :
Chop the remaining onion into small fine pieces. Place a saucepan on the flame. Add butter and let it melt. Now add the onion and sauté until it becomes light brown in colour. Be careful not to over fry. Now add sugar, black pepper powder, boiled chicken pieces and salt as per taste. Sauté the chicken pieces for 2-3 minutes and then add the stock. Simmer over medium heat for few minutes and serve hot.
