It is light and very easy to cook and therefore a favorite among food lovers everywhere in the world. So, when chicken meets cheese, one of the most heart warming foods in the entire world, magic in the form of food is created. This dish is absolutely delicious when served with red wine and is a great recipe for brunches.

four boneless chicken breasts
1/4 cup of self rising flour
four jack cheese slices
two egg whites
olive oil to fry
salt to taste
For The Stuffing
one cup grated mozzarella cheese
1/4 cup chopped parsley
Method Of Cooking
1. You need to begin by making a slit at the sides of the chicken breasts. Take a very sharp knife and make a fine slit through the side of the chicken. If you are not too sure about being able to do this properly, you could use two thinly sliced pieces of chicken beasts too, but making a pocket always works better for the recipe. Add the chopped parsley to the cheese and make a fine mixture. Stuff the chicken breasts with the cheese mix and secure the end with a toothpick to ensure that the melted cheese does not come out while cooking. Sprinkle salt and pepper. Do not put too much of salt and pepper as the egg mix will also contain both.
2. Make a mixture of the egg whites, the self rising flour, salt, and some pepper. Whisk it slowly to ensure the flour doesn’t form any lumps. Dip the chicken pieces into this mixture and coat it with breadcrumbs. Fry the pieces on a medium heat till both the sides turn golden. You will see the cheese beginning to melt gradually. This should take around eight to ten minutes. Do not overcook or deep fry. This process will give a crispy layer to the chicken. The cheese will melt but not entirely.
3. Take the fried chicken breasts off the skillet and place a slice of jack cheese on each. This now, goes into a preheated oven at 350 degrees for around fifteen to twenty minutes. You must make sure that you do not keep it any longer as the cheese needs to reach its ultimate gooey state and not get over cooked.
Serve them hot to enjoy the gooey cheese melting in your mouth with the perfectly cooked chicken. The parsley in the cheese stuffing will add the necessary freshness and zing to the palate and balance the cheesiness of the dish. You can make some light and fresh salad with green leafy vegetables to serve with the chicken. Cucumbers, finely sliced onions, lettuce and radishes can be used with a light dressing of your choice. Red wine goes amazingly with this dish too. You will be loved for this by your guests!
