Slowly start by whisking the 3 egg yolks thoroughly. While whisking, add sugar at regular intervals and mix thoroughly until the sugar gets dissolved completely in the yolk. Set it aside for sometime.Melt the cream and coffee granules in a saucepan over medium flame and stir until bubbles start forming over the edge. Add this mixture to the already prepared yolk mixture and stir it well.

3. Let the mixture to become warm and leave it aside for a few minutes and later seive it through a thin cloth. Then add vanilla to the mixture for the flavor and essence in the icecream. Here comes the interesting part of the recipe, the actual icecream making. Cover the bowl with the mixture with a plastic wrap and let it cool to room temperature and refrigerate it for atleast two to three hours until the mixture becomes cold.
4. Pour the mixture into a shallow pan and freeze it for atleast 4 hours or until it becomes firm. This is a very important step and shoul be followed carefully. After it becomes firm, cut it into large cubes and melt it in a food processor like a puree.
